The reason why Jamie fried the ginger and red chili in seasame oil is because he 'knows' it needs 'charred' ginger and chili. But he doesn't know he's supposed to do it over a flame, and then scrape the char from the ginger before chopping it. He literaly says he doesn't know why he's doing it: "..and somehow that brings out it's intense flavour".. or something like that.

I really do want a set of Gordon's pans. They're like a cross of a stainless steel and a nonstick. The nonstick parts are recessed in the hexagon pattern with the raised being bear steel to get more of a sear on foods and protects the nonstick parts.

If you get them, remember to use oil or something like they recommend so the nonstick is protected and the exposed metal is seasoned well. It should be simpler than cast iron or similar, but it still has some upkeep required. They should have a breakdown on their site or something to explain how to protect them so they last a long time.

It is amazing. And using sour-dough bread can be very delicious too. Gordon had the right spirit to experiment between cheese and bread... But he fricked up. My grilled cheese formula is 40% Aromatic cheese to 60% melty cheese, the melty one will heat up quicker and help the harder cheese to melt.

@@yamato9753 His problem was using that type of cheese which has a lot water content. It doesn't melt easily, I saw another chef do it with that cheese and he cooked it VERY slowly, on a very LOW heat, says it tok about 20 minutes to make that grilled cheese sandwich
rendang is a type of dry curry, in south east asia, it's usually cooked with beef in a dish just call rendang, because this is the staple meat the natives uses... but you can also make chicken rendang aka rendang ayam, since michi lives in indonesia, she should pay malaysia a visit and look for chicken rendang.

Based on my experience studying in Germany, I was taught by the Turkish and Lebanese restaurant owner, that by default all bacon are from schwein (pork). Altho if they add other type of meat before bacon (lamb bacon and beef bacon) then it is possibly halal. It is often an alternative ingredient for us. Similar how Indonesian altering tonkatsu pork with chicken only or beef only.

In indonesia a fried rice Seller will not use leftover rice but will use a special type of rice called "Pera" which mean the rice doesnt clump together and have much lower starch content kind of like basmati but the grain not as long 😂

I do think having someone to ask stuff about would be a good follow up. Jamie Oliver’s main target audience to my knowledge is partially people who have never made any food and Brits who aren’t particularly adventurous. So for them tofu might be seen as something new and weird.

That's just how it is, he is mostly living of rage watching at this point I have no enmity with the guy but i can't watch his recipes for the love of me. I do think he makes good western food but when he starts venturing off into other countries 8-10 times it feels like he is forcefully making uninformed choices in dishes.

@@knaditya8228 I'm a white guy and honestly he does know how to cook the food properly, but he is experimenting with "healthy" meaning quasi-vegetarian but still uses meat, he tries to do a low fat version as to him fat is evil, so then he makes butter chicken, except the sauce is completely wrong (no butter or cream). To be honest it pisses me off that he does this claiming to be there for the Brits and yet he makes food that is bland and weird. The Brits prior to the first World War actually had amazing food, seasoned, savory foods, but when the government mandated food rationing to ensure there was enough for the troops in both WWI and WWII, combined with the Great Depression, Brits lost out on knowing what good food tastes like, so we get beans on toast, bangers and mash (literally breakfast sausage, which is half bread) and mashed potatoes with a little gravy (we're talking the most basic of poor man meals here.

A long time ago using forks got popularised so that people wouldn't be able to easily assasinate the person seating next to them. They were introduced for safety, not convinence. And just like that here children are thought that they should use fork to eat literally anything. Usage of hands is 'prohibited' and spoons are reserved only for salads with heavy dressings, soups and ice creams. We do not think if spoon or fork is better for certain dish. We are unconsciously thinking more about if it's appropriate to use anything, that is not a fork. Rice? Fork. Boiled barley? Fork. Beef Stroganoff? Fork. Bigos? Fork. Small pieces of fried potatoes, that take ages to stab? Also fork. Medium-rare cheesecake that falls away when stabbed? You guessed it right, fork. Basically most of us eats almost everything, that our high culture approves, however that thing seems to be slowly changing. Btw try to slice a fish fillet or any type of cutlet from minced ingredients with knife, while eating lunch/dinner with caucasians. Apparently, the English word for galangal comes from Sanskrit to middle Persian to classical Arabic to old French to middle English. Lengkuas comes from proto-Malayo-Polynesian, so completely unrelated word. Honestly, it's kind of cool that it sounds almost like they could be cognates (l, unrounded vowel, ŋ, velar stop, a in ga _langa_ l and _lengk(u)a_ s) even though there probably isn't any relation between the words. (Well, unless the Sino-Austronesian hypothesis is correct, and the idea that the Sanskrit root was a Chinese loanword, and that the timelines match up (especially the place-name timelines, because the proposed Chinese root would mean "Gaoliang ginger"), which is a _lot_ of ifs, so I'll stick with calling them unrelated words. And, no, that doesn't add the s at the end of lengkuas and the l at the end of galangal to the evidence of cognates (via Formosan ɬ alveolar lateral fricative, since proto-Austronesian radiated out from Taiwan), because the l in galangal was actually an n in Sanskrit.) There are two (well, a lot more than two, but two basic shapes) kinds of cabbage: spherical cabbage is often called European cabbage or English cabbage, while the taller oval-shaped cabbage is often called either Chinese cabbage or Napa cabbage (because a lot of Chinese immigrants to the US settled in the Napa Valley area of California and grew the cabbage they brought with them). I knew that before we got together and even told her that we likely wouldn't work out because those kind of relationships don't work our, but I'll support her if that's what she wants to do. I helped get her in shape to pass the pt during our relationship. She eventually left to join the marines and she broke up with me shortly after, but there was no hard feelings. I didn't try to pressure her to stay or infringe on her dream. I also always told her that I, nor anyway else, should tell her how to think. Take in all view points and make up your own mind.

my mind just blown when I see that fried rice video…you know in thailand…we never use “oil” of any kind to fried rice we just slap dry cooked rice and all other stuffs (eggs and all cut vegetables) and cook it hard and fast so that it never get burned. once well cooked and all rice turn yellow it’s finished. if you were to add tofu there’s other type of tofu that was made specifically for fried food it’s hard to the point that it can be treat as soft block of meat. it hold together like cut meat in fried rice very healthy and very delicious.

Like... the chili jam is bad enough on its own, until you remember that the only other bit of flavor he put in were the scallions he cooked to death and the olive oil he drizzled into the bowl. Not to mention that adding water midway basically ruined any chance of it tasting fried in any meaningful way (on top of it already cooking at a lower-than-desirable temp because olive oil doesnt handle higher heats well).

55:13 At a glance, what he's calling "Chinese cabbage" looks like just "napa cabbage." To be fair, though, napa cabbage is a Chinese cabbage. It's just got an actual name. But you don't call the cabbages grown here in the west, "European" or "American" cabbages, they're just cabbage, so it's probably the same for the various Asian cabbages. Unless a recipe specifies a specific type of cabbage, then it's all just cabbage.
