Small Base Gravy Ingredients: 300g onions (about 3 medium-sized onions) 100g carrots 1 potato (130g) 1 green pepper 1 tablespoon garlic-ginger paste 1 tablespoon cooking oil (45-50ml) 1 teaspoon salt 1 teaspoon butter 1 teaspoon tomato purée 1/2 teaspoon garam masala powder 1 teaspoon mixed curry powder Fenugreek leaves (to taste) 2 cups water Instructions: Prepare the Vegetables: Peel and chop 300g of onions. Peel and chop 100g of carrots. Peel and chop 1 potato (130g). Chop 1 green pepper. Sauté the Vegetables: Heat 1 tablespoon of cooking oil in a pot. Add 1 tablespoon of garlic-ginger paste and sauté briefly. Add the chopped onions, carrots, potato, and green pepper to the pot. Add 1 teaspoon of salt and sauté until the onions start to caramelize. Add Water: Add 1/3 cup of water to the pot, stir, and cover with a lid. Cook on high heat, stirring occasionally to prevent burning, until the vegetables are soft. Blend the Mixture: Once the vegetables are soft, transfer them to a blender. Blend until smooth. Return to Pot: Return the blended mixture to the pot. Add 1 teaspoon of butter and 1 teaspoon of tomato purée. Add 1/2 teaspoon of garam masala powder, 1 teaspoon of mixed curry powder, and fenugreek leaves to taste. Add More Water: Add 2 cups of water to the pot. Stir well and cook on high heat until the gravy thickens and bubbles form on top. Final Consistency: Ensure the gravy has the right consistency-not too thick or too thin. Adjust the water quantity if necessary to achieve the desired consistency. Finish and Serve: Once the gravy reaches the perfect consistency and color, turn off the heat. Your small base gravy is now ready to be used in various curry recipes.

Never ceases to amaze me with all the base recipes on youtube from different chefs there is a core consistency of ingredients and a little extra each one brings to their pot. Also the cooking method differs from video to video, some add whole spices in the beginning, and would add the ground spices before blending, some infact fry the ginger/garlic and ground spices before the veg go in. Also with mix powder blends, your the first I've seen low fry dry spices before potting it up, others would do it cold, others will low fry whole spice then grind it down. Well you learn something new everyday.

I've started using a soup maker to do this. Just add the ingredients and switch on. It comes out perfect every time.

Before I saw the video I thought 'how is he using a microwave to make a base gravy?' Ha ha! This is very handy for a quick fix if you need to make 4 or 5 curries up or if you don't have the fridge/freezer space to make your lovely full recipe up. Thanks man!

Thank you Martin . Yes I just added this micro one for the people who just wanna make a small base for a few curry. It's a day base. Also I added green pepper, normally I dnt add. You know this green pepper to be honest you don't taste anything on gravy if you add. So I think it's better to just skip it.

Syed, you are knocking out some top class content.. Potato as far as I'm aware not an item to make a traditional home curry sauce with, what does it bring to a base gravy? Is it like a savory thickener?

Thank you ☺️ Yes you are right. Our traditional curry sauce is always made with onion. We don't add carrot or potato on our curry for the gravy. I heard back in days about 40-50 years ago in this country BIR base used to make with only onion. No carrot or potato. And what I have told about carrot n potato why we add into the gravy is for little bit sweetness into the curry. Nothing else.

The potato, is that there to thicken the sauce so yo don’t need to reduce it to get the needed consistency?

Hi Daniel, Thanks for your comment. Yes the potato does help to thicken the sauce. But still remember when you make your curry with the gravy make sure the gravy is not thick. If it's too thick add water and reduce it to get the needed consistency. If you don't like potato you can skip it.

I do agree with you. That's what we do in restaurant. Here I am using small blender that's why.
