James, I love how creative you are!! I love making foods, and experimenting with different kids of beverages! It looks like you have lots of knowledge about this! Have you always liked cooking? Good for you!! You are really making the most of your home, and having lots of fun doing things that you enjoy! The meads sound wonderful. I am going to read up, on this process, and learn more about them. Doing stuff like that is so much fun! You are making terrific efficient use of the space!

Hi James. I've really enjoyed your video's. I was searching apts, and saw the 211. On an off chance that there would be info here on youtbe, I searched, not really expecting anything, and found your first video. I was hooked on your journey ever since. I'm in wa state, but restless, and thinking about moving. was it difficult getting into this apt? as far as credit requirements, etc? maybe you could talk about that in one of your video's? thanks for taking us on your journey!

Thanks for watching! I used to live in WA also. It’s already been a year and honestly I don’t remember the credit requirements. It wasn’t difficult and the deposit is pretty low. My credit isn’t perfect but I got in. Hehe. If you do move here, tell the James Willis from James In Vegas referred you. I just renewed my lease for 18 more months!

Looks good! How long start to finish does it normally take?

Hi David. Thanks for watching. Honestly it truly varies. I have had some the are finished fermenting in a week and some that have taken 3 weeks or more. Then after fermentation, the flavor is still pretty harsh with an alcohol burn. and it needs time to clear and mellow out. This could take a month or up to 6 months or more. Having it in a cold fridge helps speed that process up. These particular batches took on average 1 1/2 to finish fermenting. Some are still clearing (sediment drops to the bottom). I plan on taste testing in another week or so.
