@20:40, between the encyclopedia of chiles, and the display of them in the classroom, how can you get to know all of this stuff in your head, even if you've tasted them all? Then you have to remember all of them, to help customers understand what they are about to eat. A daunting task for a waiter, I would say. I couldn't do it, in just a few days. Does a waiter taste every item on the menu, in order to converse intelligently with the customer ?

Most restaurants will cover these points and have tastings with the servers. They are given critical information such as how to serve the dish, how to explain it, and of course, how to taste it.

I love these shows, brilliant approach to understanding a restaurant. And it’s interesting to see the ins and outs of something that is technically a franchise but still has heart and a dedicated chef as a big part of it.

What an inspiring and educational story. Wanna know something funny and gross at the same time? In England roadkill dishes are very "in style". Don't follow cars on country roads too close, this guys hit the breaks hard if a roadkill is spotted in a ditch!

Not Tex Mex, but not Mexican either. More like Mexican American food with a hint of European, with those pine nuts and aioli and other non Mex ingredients that they probably use
