SWEET JESUS, I wish I had Mike's nose! He has the PERFECT nose for cuisine in general and wine tasting in particular. Its various attributes combine to form the perfect plenum as an intermediary between the environment and his olfactory receptors, which can only result in a much greater olfactory experience, and that means a much-enhanced ability to TASTE! Notice how the classic Roman profile extends steeply vertically upward from the nostrils and terminates all the way up to eye level. That increases and extends the portion of the chamber positioned closest to those receptors I mentioned, so there is optimal mixing of the air with the volatile flavor compounds and scents wafting up from whatever he is savoring. GOD I wish I had his nose! The advantage it must afford him in detecting and savoring the finest details of wines I can only imagine, and those imaginations make me not jealous but wonderous -- and respectful of how Mike must have developed a superior skill as an oenophile while utilizing it. I know it may seem a bit strange to kvell over another man's nose, but I'm one of those rare male Supertasters (most are female) who experiences flavors and scents more intensely than normal folks, so I have become virtually addicted to the stimulation of great flavors and scents, and like any addict I always want more and more. Perhaps this might explain my absolute amazement at the perfection that has been bestowed upon Mike by the Genetic Lottery. And yes, I would also want mine like that for its aesthetics, too. Art and function. Utterly beautiful.
