Philippines use to be colonized my Britain 🇬🇧 that’s why oldest people still familiar with English language . The British occupation innManilla was an episode in Colonial history of the Philippines 🇵🇭. When the Kingdom of Great Britain occupied the Spanish Colonial,capital of Manila and the nearby Port of Cavite. That’s why some Philipines can speak English and Spanish mixtures.

Well, that's normal because there are more than 7000+ island in the Philippines composed of at least 200+ languages/dialects. Each had it's own culture and traditions so you can't describe the Philippines' culture as a whole because of its diverse culture.

The grandpa is 98 years old? It means he grew up during the American colonial period in the Philippines. He went to school which were staffed with American teachers brought all the way from the US. That explains why many of our elderly in the PH are very fluent in English. My grandparents and my parents did not have much money but they were educated and they required us to speak English at home. That has been a source of friction when i was growing up. But when i reached college, i came to appreciate why they did that and thankful to them. I intend to do that when i will have kids.

Fyi the igorots were the SAF during the American period. I have seen many picture of the igorots with the american soldiers back when i was studying college during the late 90's at the National Library.

The Cordilleras is a wonderful place and a hidden gem in the Philippines. Most will only think of Baguio, but there are other provinces outside the city that need to be featured more. However, some of the details regarding the preparation of etag here are missed and I just want to add them to clear all misconceptions the viewers may have. (1) We do COOK THE MEAT before eating it. IT IS NOT EATEN RAW. (2) The MAGGOTS ARE REMOVED during washing before cooking. If not totally removed, they are safe to eat though. They along with the meat are cooked killing all bacteria and parasites that You might be worried about. (3) It is not served as a main course. It is usually mixed with vegetables, soup, or with pinikpikan (chicken). (4) Back in the day, yes, they only prepare pinikpikan after occasions/celebrations as it is only at these certain times that our ancestors have access to meat. Nowadays, as long as you have excess meat, anyone can prepare ETAG. No ritual is required before making some.

@@nungku1 get a kilo or2 kilos of meat then put salt by rubbing in all parts of it. after put inside a jar or any kind with cover. then put it in a place which is noy hot or put it in a storage for 1 to3 days, then smoke it or dry it withe the sun, do this everyday and after a week its ready to cook. you can also add ingredients like ginger, garlic etc. sorry im not good in engkish grammar.

Im here in cordillera for already a year, my friends they showed me the meat in a tupperware (left for 2 weeks) full of maggots, when i opened the tupperware i nearly vomited for the stink... cooked overall its delicious aside its a little bit smelly

Wow. The flow of the way they speak and the accent is really close to the Kadazan/Dusun people in Sabah, Malaysia. I was born and raised in Malaysia but now living in Cebu, Philippines and hearing them speak just makes me smile as this just helps open people's minds and see that these countries are more related than they initially thought. I know this should be obvious since the two countries dont sit that far apart from each other but you would not believe the hate and descrimination that are being displayed due to Illegal immigration. Ate an Etag already, it's a salted and smoked pork kept under the sun or hanging. It taste like just smoked ham or bacon but with more nuttyness in it, no putrid taste or whatsoever. However, the Etag featured in this one is one of the more hardcore types. Typically, the Etags you can buy in markets are well kept, handled, and doesn't have maggots. It's just like aged pork :)

I had an etagsilog in Baguio, the one I got was actually pretty funky, it didn't taste like just smoked ham or bacon that you usually get in stores. It depends siguro who made your etag, you might have gotten one made more "sanitised" but etag definitely has a funky aftertaste.

We don't have nursing home or no one of our people ll keep our parents or grandparents at nursing home ..it is so warm n happiness to have elders at home ..if the grandparents are at the village then most of the youngsters went to village during summer or winter break to spent time with them ..yes I have seen in U.S many nursing home are there leaving their parents there in loniness so sad to see this ,it is our duty to look n take care of our elders .

We the Nagas(Tangkhul) from India 🇮🇳 we did the same like they do, we keep the pork for several months (best time to store is in winter). But we didn't eat raw. One recipe is that : We can cook with fermented bamboo shoots, chilli powder and salt do not add anything extra. Cook for around 2 to 3hrs don't let it go dry add water constantly and enjoy with rice.

I'm loving your Philippines series so much, Mike. You set an incredibly high bar with your previous videos, so I don't say this lightly, but these are some of my favorite videos you've ever done. It must have been such an honor to speak with Lakay Wa-Ow and wear his bracelet and necklace, and to get permission to visit his ancestors in the cliffs. Several years ago, I saw a documentary that talked about a fermented fish dish that the Yupik people of Alaska eat, which is basically salmon heads that are buried in the ground for a few weeks before they eat it. After seeing that, Etag doesn't seem that bizarre to me! Always cool to see you try new and interesting foods like that. You only live once, right?

A problem with the Philippines is that you really have to go into the deep provinces to find the full culture. I mean my mom who lived in the Philippines for 20+ years knows 0 to none about our mythology and original cultural practices. It's sad to see it slowly fade away especially with my generation mainly going abroad and forgetting Tagalog or our provincial dialects.

Yes if you stay with a Filipino they will share with you. Though if you are visiting in laws they will expect gifts and treats as you are a rich relative.

Oh that (foreign language) i do understand 😀. Most of the Filipinos specially the lowlands are not familiar with etag which is not a surprise cause there’s a lot of misconceptions about Igorots or Cordillerans in general. So im happy that there are blogs like this which helps educate them about someones culture and tradition.

The Spaniards had a hard time conquering the Cordillera regions during their reign. However, the Americans were more systematic and offered a more civilized approach -- a win-win for both the settlers and government, if you will. The reason why Cordillerans are very proficient in English is that our elders were educated by the Americans, did businesses with them and befriended them, to say the least. They even set up military bases in different parts of the region as well. So the Americans had more impact in the lives of Cordillerans. So if you were to ask the Igorots what language they could speak, they're ethnic dialect would come first, English would come second, then probably Ilocano and only a few could speak straight Filipino (Tagalog, though it might vary in different areas). And oh, we usually add etag to "pinikpikan" or white or black beans. Man this is making me miss home -- the cold weather and all. Cheers man and thank you!

President McKinley said that the US could not let the Spanish take back the Philippines because it would be cowardly and letting France and Germany take Philippines would be bad for business. He considered Filipinos incapable of ruling themselves, so he could “educate” and Christianise them, something the Spanish did to many people. 1889 - the US declared war on the Philippines to CHRISTIANISE, CIVILISE and EDUCATE the people. 1899 - 1905 - 1.4 million killed in just 6 years. The US also referred to Filipinos as "brown dogs"

I like how you immersed yourself in the filipino culture in a respectful way especially dealing with an elder igorot. Not a lot of people would have the guts to do just what you did. I love it when people actually dig deep into our culture. Philippines its not just about the beautiful beaches and landscapes its also about the diverse culture that we have and experiencing it, its what makes us unique in our very own way. There are some foreigners that would make brash remarks just cause its not normal for their culture, but youre on point with the respect and love! salutre brotha!

I personally know of a story of an Irishman travelling to Mountain Province with his Filipino friends some years ago. When he met with a very old local (a relative of his friends) who offered his home for them to spend the night with, the Irishman saw the making of the etag. He then said that he was reminded of a part of their own culture where they do something quite similar, though different to a bird's meat; i.e. smoking, drying under the sun, etc.

In Vietnam, there are similar food. You can go to the plateau, and go to the mountain, meet the Ede ethnic, they have food name "meat hanging on the tree". When they go to the forest, they hang the meat on the tree to avoid animal. After a few days they come back, they will roast it, eat the meat also the maggots.

I found their political views interesting too. Most older Filipinos didn't like Americans, I guess maybe because they were a former colonial power. They also didn't dislike the Spanish as much as I expected, probably because none of them were alive during their occupation. They also seemed to love Britain and I really couldn't fathom why. Younger generation don't really care though They have a lot of history with many different country's. My girlfriend can speak English, visayan, Tagalog and Spanish. Meanwhile I only speak once language.

Walang problema sana kung hindi marunong mag-Ingles. Ang buwisit ay kung hindi hiyang sa kahit na anong wika. Taglish salita katapos hindi kayang mag-Ingles ng tuwid o managalog ng tuwid. It's not an issue if one doesn't know how to speak in English. What's irritating is when one is not fluent in any language. Taglish is spoken but can neither speak straight in English nor speak straight in Tagalog. 'Nakakapalalong'

Of all the places in the Philippines, Sagada holds the most special spot in my heart. It was a surreal feeling to witness a traditional Sagada wedding where they played the Gangsa all night long as part of the festivities. Looking forward to more FIGHTERBOYS 2.0 adventures!

Serranos in spanish (also found in Portugal and Brazil) is topographic name for someone who lived by a mountain ridge or chain of hills, from an adjectival derivative of serra.

If you're wondering how the Village Elders are so fluent to English (also Spanish and Japanese) due to our past Colonization from Americans, Japanese and Spaniards, That's why my Grandma who's a non elementary graduate can speak perfect 4 Languages including our own Fact: among all places in the Philippines only Cordillera is hardest to conquer back then, that's why most Traditions in the Cordillera Region is still alive

Etag- smoked pork meat, can be dried pork with salt. Some put vinegar to avoid flies if under the sun. Some cover the salted pork with net to avoid flies.

Yesterday I talk to our tour guide in Mt Ulap hike he is a local in Baguio and he told me about this their traditional food this is one of their best food to eat if you want to try their local/traditional food 💖 Your video is amazing this is a knowledgeable content 🙌

In a foreign country they called it aged meat covered in salt or ajinomoto but the difference is we igorots use the sunlight to process it while the other countries put to the refrigerator while covered in salt

had the "meat lovers pizza" in Sagadas "Salt N Pepper" restaurant. Most yummy pizza you can imagine and it's made mostly with etag sisig.. recomendable.

One of my fav places to surely visit in the north. I've loved Sagada ever since my sis shared her story why it's her favorite place in the world. She mentioned how kind the locals are to each and everyone. Life's simple yet it's full of wonders
