Hot oil is not that spicy. You end up cooking off a lot of the raw heat in chilis. You need extra to get a good hit.

pho 99 in my town (manchester, ct) cooks their broth for 24 hrs with option of spicy or non spicy broth. of course i have to always get spicy with brisket and its one of the best things ive ever had in my life! i couldnt imagine how good a broth that was cooked for 48 hrs would be! and i grew up in st. louis amd love it there! love the videos!

Mikey, Just watched a food vlog (I believe his channel is Rockstar Eats, mostly out of L.A.). He ate at a Chinese (Shanghai, Hong Kong blend) homestyle eatery out of Filipino Town called Woon's. The food was very exciting. There was a pork belly bao that looked to die for, scallion pancakes, beef noodles, and more But the dessert . . . well, you'll just have to go there to try it. I would LOVE LOVE LOVE to watch your reaction to their food. The mom's son runs it now, I believe his name was Keegan. I hope you check it ou next time you are in L.A.
