I’m confused bc at my job we don’t take all the containers out for the night we just put lids on them. I think that’s bc our food line thing is chilled as like a fridge
@warven1659
@warven1659 2 жыл бұрын
I've worked on a food chain kinda like subway (like with a line and cooking in front of customers) and we did the same thing, just lids and done, mainly because our line was literally above a fridge, so the place where we store the food line was connected directly to the fridge below. Maybe that's why Milad keeps them at the back fridge at night

@@pot_hockets yees, but I get it tho, sometimes my store also struggled to get the whole store inventory in the fridges, even more when it's delivery day. It's not that good leaving things on the floor, but I guess sometimes you need to.

as a subway worker myself I can agree with reaper. But. There's also another reason. If the sandwich is very large and hard to fold it isn't easy to pick it up normally with just the bread, so picking it up by the paper is a lot easier.

Milard - can you make a Vietnamese banh mi (sandwich)? The typical Vietnamese banh mi includes a variety of meat (headcheese, cha lua (a type of sausage), etc.), but you could use the cold cut combo at Subway. Banh mi also typically include pate, pickled carrots and daikon, and cilantro, which I know Subway does not have - but I figured you could be creative with it (for example, use pickles in place of the pickled carrots and daikon). Note: Instead of cold cut combo, you could also use egg and Maggi sauce (could substitute with soy sauce).

So basically in a busy store it’s almost impossible for something to not be used before it’s expiration date, we have a chart and every cambro gets labeled and we know the date and time it was made and who made it, if something is not used by the date it’s supposed to be, we’ll just throw it away, but again it rarely happens like almost never.
