I did notice about the gloves, but I understand changing, customers probably don't want food mixed, especially a vegetarian if handling meat, or someone who doesn't eat certain foods. Good to know they are biodegradable. I've made a few subway sandwiches at home, just adding the salad and toppings you get the same flavour profile to a sandwich. The silicone moulds probably help to keep the bread soft, something I may look at getting in the future. I like to make different take away foods at home :) Thank you

I believe the baker's lame, or bread lame is the name of that little knife. Also, spraying water helps the bread to be airy and have a better crust. Yeast reacts with sugar, not water. For slicing the bread, perhaps the word score is what Milad is looking for? Not scour like when you scrub a pan, who knows

The water is so the surface of the bread doesnt dry out and can rise more.

Milad - I just have to say something. Scoring (score•ing) is the process of cutting a slash in the surface of bread dough before baking Scouring (skow•er•ing) has two definitions: clean or brighten the surface of (something) by rubbing it hard, typically with an abrasive or detergent OR subject (a place, text, etc.) to a thorough search in order to locate something.

I'm exactly the person to help you lol the word is 'score' like score a goal. Scour, like you are saying is when you wash something like wool with very very hot water without agitating. I've always been curious about this one thing. Why some people just REALLY don't like it when others use their bare hands while cooking the food. Of course, people clean their hands properly before cooking and during cooking, and I've seen a lot of people who use gloves and just touch everything without even changing the gloves. Wouldn't that be grosser?
