Leah - you are by far the best espresso instructor on KZbin and a great ambassador for La Marzocco. Thank you for the lessons. I have one question about the steaming technique: What is your advice for how much to open the valve? I've seen one instructor say that you have to open it all the way. When I do that on my machine, I nearly create an actual tornado and not just a figurative one. It didn't look like you were opening the valve all the way and in fact seemed to adjust it based upon what you were seeing and hearing. Perhaps that is just a feature unique to the Mini.

Here it is not making the milk hot enought that I have to put in the microwave to make hot. It makes the milk frost, but not too hot, just warm. Very frustrating. Should I put the know + all way up? I do, but it does not make the liquid hot.

Where can I buy the book on this video?!? Only kidding! I too appreciate the detail you went into in this video. I was looking for instructions how to improve my milk texture so I can finally try and produce some latte art some time down the road (had an espresso machine for over 8 years, but cannot do any latte art for the life of me). This "Encyclopaedia of milk steaming video" should prove as a useful reference in that regard.

But, if you watch how the Italians are doing their own cappuccino, you will see that they leaving their milk to stay for few seconds after is frothed.
