70g caster sugar 250ml milk 20g black tea 3 egg yolks 2 gelatine leaves soaked in room temperature 250ml whipping cream Put 35g sugar in a pan and melt until it turns dark caramel. Remove from the heat and pour in the milk. Put back on the heat and blend the caramel and milk together. Pour the black tea in the milk and caramel mixture and steep for 20 minutes. Once done, pass the mixture through a muslin cloth to remove the tea leaves. Whisk the egg yolks and the remaining sugar until pale. Pour in the tea-milk mixture and mix thoroughly. Pour everything into a pan and bring up the temperature until the mixture is thickened but not boiled. Squeeze out excess water from the gelatine sheets and add into the heated mixture. Stir until completely dissolved. Whip the cream until it reaches soft peaks. Fold everything together slowly. Pour the mixture into small pots and chill in the fridge overnight. Serve within 1-2 days.
