Oh my gosh I gotta try this one. I just finished making your tamale casserole. It's sitting on the counter cooling off. I can't wait to try it. Love this! Well done! I usually add a couple tablespoons of sour cream to my jiffy and real butter on top is so moist and good like this. I mean when making jiffy. It is a favorite at NaNa Jean house.

I tried making a taco pie... The cornbread wasn't cooked enough & I put it back in... Then it was way hard on top.... My husband still ate it though...lol

You can't put the mixture on top of the cornbread unless you pre-cook the cornbread. It's just going to be a soggy uncooked cornbread mess on the bottom.

I know that you don't really do a lot of food history but it would be interesting to learn why Midwestern cooking uses so much cheese. I'm not a real fan of cheese and meat but I have family from the Midwest including Midwest Canada and I kinda think it has to do with stretching protein. In San Antonio and in Houston we say tamale. Like, all my life and I’m 60. Grandparents, Aunts, Uncles, everybody I know. We never say tamal.
