I’m using your Pro Mineral B pans and the SS handles give me the option of seasoning in the oven although I choose to use the stovetop method.

Do you need to let the pan cool down before washing? I've just purchased 2 of your pans.

Hello, We thank you for your interest in our items. Mineral B and Carbone Plus are made of the same material i.e. steel. Mineral B has a natural beeswax coating. to protect it from the rust. You can't season it in the oven, seasoning has to be made on the stove. Steel pans with flat handles can go in the oven only for 10 minutes at maximum 392 degrees Fahrenheit. Steel pans with only stainless steel handles (for example round deep country pans ref. 5654/24/28/32) can go in the oven. We remain at your disposal for any further information you may need. Hello, I understand the flat handles have an epoxy coating and cannot be used for very long in the oven. What about the Mineral B French collection with a stainless steel handle? Can that be used in the oven to cook food for longer than 10 minutes?

I still prefer to use the potato peelings method you used to recommend. 😊 I wish you hadn't pulled the video. And I LOVE your pans. I just bought two for a friend with a third on backorder.

Just bought the 8" mineral B. Nonstick works great if you follow these instructions. Great quality pan, made in France. Hopefully it'll last a long time!

You risk damaging the silicone coating of the handle. If you haven't already got the skillet, you may get the carbone plus series instead. It's the exact same skillet, just without the coating on the handle ... and it's cheaper.

Hello de Buyer. I intend to buy a steel de Buyer pan in the next 3-4 days. There's an aspect still confusing to me. What is the difference between the Mineral B range over the Carbone range? Thanks.

Hello, We thank you very much for your interest in our items. Mineral B and Carbone Plus are made of the same iron material. Mineral B pans have a beeswax coating to protect them from the rust when stored at the retailer. Carbone Plus pans+ have no such coating as it was originally meant for professionnals and had nearly no storage at the catering-retailer. I bought my pan and it says to clean it for the first time without soap, but in the video they did use soap. So how do I clean it for the first time with or without dishwashing soap?

We suggest you to wipe a few drops of vegetal oil on it before storing it, in order to protect it from the rust if you don't use it during a certain time. Hi, I just got gifted two mineral B pans from someone moving country. The seasoning is no longer ok. What is the best way to strip the pan back to its original state. Is vinegar ok to use and can I use wire wool?

Boil water and white vinegar. Don’t use metal scrubbing pads. Plenty of how to videos here on YT. Cook Culture and Uncle Scott’s Kitchen have excellent videos on cleaning and seasoning carbon steel cookware.

Hello. I have just bought this pan. I understand you mustn’t cook tomatoes/white wine/lemon however what if I want to use some of them for deglazing the pan for umami? Is that ok? I will be so grateful if you give me an advice!

Out of the three ingredients you quoted for deglazing the pan, we highly recommend white wine, which will give the best result without harming the seasoning. Hi there. I recently removed the seasoning o my mineral b pan with some vinegar and re seasoned the pan with avocado oil. But I noticed my eggs have grey discolouration on the bottom of the egg whites. Is that normal? I don't think I had this problem before. It is not burnt bits. Thanks.

Hello, We thank you very much for your interest in our items and are sorry for the delay of this answer. We advise to remove the seasoning by heating up raw salt in the pan during 3 to 5 minutes. Then get rid of the salt, wash the pan with clear water, dry it and season it again by using some lighter oil such as sunflower oil or rapeseed oil, for example. There's a beeswax coating on the pan already, it's kind of pre-seasoned.

@@bettinaprice6814 the bees wax isnt going to polymerise like the oil, it will melt and burn in direct contact with the flame.

@@Shazzkid I bought one of these this week, and according to the instructions, cleaning off the wax with the hot water removes most but not all of it. The layer is really thin. I actually did my pan this morning the way they tell you to here, and it turned out beautifully. It's a lovely seasoned colour all round. Tbh, I was quite surprised that that worked, too.

good information, when i got my carbone plus there were a lot of videos on youtube advising cooks to develop a uniformly dark coating on the pan which was a waste of money for an expensive oil, a waste of energy for all the heating, and increased exposure to toxic fumes--and the coating simply cracks off. this is the best way to do it, truly function over form because my pan is nonstick and easy to clean and i don't have to use expensive oils to build up the nonstick coating.

A pre-seasoning like what's shown is a good first step. The REAL seasoning comes with continued use and proper maintenance of the pan, which I suspect you've come to realize.

Very uneven cooking surface. The oil pools on the outside and there's a big dry spot in the middle

Hi, I have a De Buyer Acier Carbone Steel frying pan, 26cm. Bottom diameter is Ø 18.2 cm. I use an induction hob cooking zone Ø 17.5-18 cm, slightly smaller than the bottom of the frying pan. The frying pan is not hot enough and the non-stick is a bit uneven, otherwise I absolutely love my frying pan. Can I use a bigger cooking zone, Ø 21 cm ??? Sincerely // Mel

The melting point of beeswax is 62...68 °C. Is the water flowing from your tap so hot? I suspect not. so here it is. You can only dissolve beeswax in your pans with boiling water from a kettle. Don't deceive your customers with such videos.
