For chef Inaki Aizpitarte, following the seasons and its produce is a fundamental philosophy to his cooking. When Chef Ludo Lefebvre comes into the kitchen, the two reminisce about a classic French dish their mothers use to make: macédoine. Usually made with canned vegetables and mayonnaise, Inaki and Ludo elevate the comfort food by using fresh-picked spring vegetables and a blend of Inaki's inventive “Garrigue mayonnaise”, a light herb and anchovy-based filling. Pretty magical stuff, if you ask us.
