Dear David trust me, I tried the tortello cooked in this video almost a thousand times and it was always delicious. Italians know how to cook just with eyes, too :)

That's why it's best done by hand and not by machine. As she said a machine heats the dough - not good.

Damn, there is so much effort put in this "tortello". It's beautiful, no matter there is a bit of salt missing whatsoever. Have to try this - and failing so gloriously like the experienced chefs do!

I remember an episode of MasterChef where they had judge Joe Bastianich's mother from Italy on, and a guy put nutmeg in his pasta. She said that wasn't a very Italian thing to do. So who's right? :)

Nutmeg is very common. Joe also said nobody in Italy eats bread with garlic on it. He’s blinded by what he knows but not what every region of Italy does

My mother did that her whole life. She made the dough snap just like the ladies in the video. She had a bread board made the size of her kitchen table. Her rolling pin is 42 inches long and 2 inches in diameter. The ends are burnished from the oils in her hands. It's one of my prized possessions since her passing.

clone doctor I think the best way is to it yourself straight away in big service restaurants. When you have vacation go and help either wash dishes or peeling vegetables to get a feel. But a big hotel restaurant is where your gona immerse yourself in everything and grow massive confidence balls

clone doctor I think the same, see if you enjoy a real professional kitchen and after working for some time you can look into culinary school. school is great, lovely and at times it feels like this kind of shows. but the reality is the job is hard, it doesn't pay well and it's very taxing. that said, if you like it, you will probably love it.

Start in your kitchen at home. You have the benefit of having all these uTube videos. keep in mind it's hard work, you don't have nights off and you work holidays. You work when everyone else is having fun or celebrating. Good luck. Get a job working in a kitchen. You may start out washing dishes but you get a chance to see what a chef does. Look up culinary programs for high school students.

Why did you not show how she put the top pasta? I was like, that ricotta is A LOT. Asking myself how can she cover the entire thing.

It's actually pretty "easy". Just take 5 by 5inch pasta sheet squares, and fill the lower pasta sheet with a third of a cup of the filling, and then lay the top sheet ontop, starting from the back without pressing too much and making sure all the air is let out. After that just cut the pasta in the desired end shape :)

I tried this and honestly I was not as good at rolling the dough as she was. I put hollandaise sauce on mine. They are tasty.
