Ludo Lefebvre journeys back to his homeland of France to cook with his mentor, the legendary chef Alain Passard. Reuniting more than two decades later, the chefs head back into the kitchen, creating two amazing dishes from a fresh-caught Brittany lobster.

I adore Passard. To even have the guts to make a dish without added salt... That’s an unbelievable level of confidence in your ingredients.

Why? Lobster from the sea is incredibly salty by nature. Simmering the lobster extracts much of the salt into the surrounding broth.

No no no... Chefs are like mechanics. When does a painter listen to their painting? We are artisans whose creations die in minutes. Bach, Vermeer, art lasts centuries, food lasts minutes.

Well to be fair, Ramsey's style is more rustic. And he's also a three-star chef. If you ever go to his original restaurant on hospital road in London, the food there is very artistic as well. I read one of his interviews somewhere, and it said he'll never put those recipes on tv because they are impossible to replicate in an ordinary home. Then again, Allain Passard can make anybody in the world look like a one-star chef. LOL.

We have this soup in the philippines similar technique to this. We would smoke and lightly grill pork or chicken then add to the soup. Its rich and smoky
