What about Minecraft Manhunt, but it's freeze tag? If you kill a hunter they can't respawn until their corpse gets tagged. If you kill all the hunters to the point they can't save each other you win.

Nah, victory condition should only ever be: Hunters kill the runner, or runner kills the dragon. So in the event of your "freeze tag" game, if all hunters are dead, and thus unable to revive their allies, they respawn back at world spawn, NOT any beds.
