They don't need any skill... they just reverse the video and actually destroy the map. U can see it at 2:14. Look at the dirt. It gets more as the video continue. At least I think they just reverse the vid.

Actually what they did was: they made the build, started recording and then broke down the build again, then played the video backwards. Thats why there's dirt in stead of grass on the places where blocks are going to be placed (first scene of the video)
