Hi Angie, glad you liked them :-) The pastry cream and the shortbread crust really go well together. Google + is driving me nuts ! ... you wouldn't believe all the steps you need to go through just in order to reply to comments.... and they aren't working correctly either. I hope they fix this soon. ( They are forcing everyone to use Google Plus now that uses KZbin ( a very bad move ) they want to compete with Facebook. Argh :-( Have a nice weekend Angie ! By the way Big Brother Australia 2013's winner was crowned the other night... woo ! :-)

Hi Tammy ! 🙂 well that's a great idea, I wouldn't have thought about that filling, but I do love sweet potatos, so yeah I say try it out. No need to grease your pans, but if you a bit worried, then you can. Thanks so much for watching ! 😊

Hi there, Bavarian cream is different, in that calls for gelatin, but if you like Bavarian cream you will like this also, it's an amazing pastry cream. Thanks for watching :-)

Hi! I would like to know how do you make the pastry cream so creamy after its been on the fridge!!!??? Because I've tried your recipe and its texture gets more dense after the cooling part. tks

Hello Marina ! Everything tends to firm up ( get more thick ) when it is cold. A simple tip, - bring the pastry cream out of the fridge, and whip it with your beaters, this incorporates a lot of air into the mixture. You can leave it on the fridge for 10 minutes and whip it. The warmer it is, the better it will whip. A good thing - when you wish to serve your tarts, you can whip the pastry cream, pipe it into your little tarts and then serve. Whipping the pastry cream makes it very nice if you have had it in the fridge overnight. I hope this helps and thank you for watching :-)

Hi I would like to ask if I can keep it overnight? Will the crust turn soggy? Coz I would be baking in a day advance and then bring it out to eat the next day
