Terrific, as usual, Chef! I've felt for some time now that any roll-up can be successful with a good filling whether it's a tortilla, a cabbage leaf, filo, a won ton wrap or a Breton crepe. This will work in anything, even ravioli or manicotti.

When I roll eggrolls, I like to start with diagonally (so the wrapper will look like a diamond). After putting in the chicken, fold the sides towards the center and then roll it.

Because you loved things like this, as you said, I'd like to share a super simple experiment I tried one morning at the restaurant I work at. I took and grated some pepper jack cheese, and put it in a plastic deep 6, and added some of our fajita chicken (to my understanding, we have an in house fajita marinade that we add the cooked, cubed chicken breast too, and let it sit in there for a few hours at least, before we portion it out during prep. I say to my understanding because that is prep I've never done, so I'm not 100% sure how we make it). Mixing the cheese and chicken, I then portioned it out about 1.5 ounces per wrap, wrapped it up, and fried them. Everyone who tried them liked them, but the appetizer menu at work is full enough, so it is an experiment that went nowhere. Still, we did all enjoy it, and as a dipping side, I used some salsa and sour cream. They really came out delicious. I'm sure you could make a dozen worthwhile changes to the recipe, but I hope you like the concept, and I hope if you make them up, you're thrilled with the results.

I was always taught to roll egg rolls on the diagonal from the corners. I love the idea of a buffalo chicken egg roll. Could also do one with leftovers from Thanksgiving/Christmas, Philly Cheesesteak, or Reuben eggrolls.

Since you like most anything in the egg roll wrapper, try using them for Chili Rellenos instead of beer batter. We did this at a restaurant I managed. We rolled them in panko bread crumbs then froze to make them fry better. They are less greasy than the beer/tempura batter Rellenos. We served them with a green enchilada of tomatillo sauce topped with Jack cheese.

Since it is an egg roll, I would add chopped water chestnuts, fresh and sauteed onion/red bell pepper to give more crunch and zing to the filling. Chicken wings are dark meat so I would use grilled boneless chicken thighs sliced in strips that were marinated 24 hours in Frank's RedHot sauce, apple cider vinegar, veg oil, brown sugar or honey, chopped garlic and Kosher salt. Fried food items like this are most popular at parties but I would make each roll half the length....from experience, people prefer it portable, bite-sized. You can take it one step further and dust each roll with a mixture of flour and cornstarch or add some water and make a thin batter.

here in indonesia, we got 2 slightly similar dishes or snack jut like what you made here. 1st is 'Lumpia' which is assorted vegetables eggrolls and 2nd that is 'Sosis Solo' (roughly translated to Solo's Sausage) neither Solo region staples nor sausage.

Chef! I love celery leaves. I always seek the leafiest stalks in the store and markets. I use them in anything i put celery in, I never pick the leaves off. But I also love them as a garnish on dal tadka.

I did this one last month, but with a lot more buffalo sauce as well as shredded cheddar cheese inside. i also breaded them with homemade parmesan bread crumbs. another tip. roll up diagonally and just fold the side corners in, after one rolling over one time.

Hey chef John I just tried these using vegetarian chicken. it works great! I am still terrified of deep fryers but escaped injury. With the oil at 350 they were getting very dark very fast so my filling was barely warm and the inner folds of the wrapper were still raw. I'm going to try reheating these in a moderate oven to maintain crispiness and hopefully finish the cooking process. Any tips for next time?

I know it’s been three years since this comment, but maybe someone can get use of it now. I would think it’s because of the temperature of your filling. I often will cook my filling down a little bit with some onion and shredded cheese, so that it gets melted, and the inside is warm. Then when you put it in the egg roll, the fryer mostly has to crisp up the eggroll wrapper. Less effort for your fryer, also means less time in the fryer. Good luck!
