Mini Meatloaf

Two easy mini meatloafs cooked in a NuWave mini oven.
(My store: teespring.com/...)
Ingredients:
¼ cup diced onion,
¼ cup diced green bell pepper
1 egg
1 pound ground beef (80/20)
1/8 teaspoon black pepper
2 teaspoons garlic powder
2 tablespoons Worcestershire sauce
½ cup crushed Stove Top Stuffing (savory herbs)
Salt & Pepper tops of loafs
Topping: spicy ketchup
Bake at 275 f. in NuWave oven until internal temp. of 160 (approx. 35 minutes).

Stuffing mix is a really good idea, same with bagged dried bread cubes and all sorts of croutons crushed up a little. Using the top of the butter dish is a neato idea ! I got to thinking about all the tomato products that might be subbed for ketchup glaze such as pizza sauce, a thick pasta sauce or sun-dried tomato pesto, the last being very easy to make at home and much cheaper, too.

I am sooooo glad you posted this recipe! I love meatloaf, however, I’m only one person so I never make it. I will now, but I’ll have leave out the green bell pepper, as I’m not a fan of them. I will use extra onions. Thanks, Ken, I’m making it for my Sunday dinner. Great idea to use the butter dish lid. I got rid of my NuWave oven and bought the Cosori Air Fryer, takes up less counter space and can prepare a lot more recipes than the NuWave! Again, thanks!

Now I want meatloaf. Thanks!! What I do when I make meat loaf is to forget about the loaf part and turn it into a large patty about 3/4" thick, enough for a single serving (usually about 8 ounces). Then I toss it on the grill. That way both sides have got that delicious crust. I'm not a ketchup fan, so I use brown gravy when I'm ready to eat it. MMMMM.

Folks, if you don't have a mold for mini meatloaf, save the sturdy bottom box bottom of velveeta block cheese, line it with saran wrap & press in meat, it works.

I have made meatloaf with dry lipton onion soup mix, or 2 slices of cubed white bread with a little milk for binders with both the the egg as help to bind.. I gotta try this. I make 2 kinds of meatloaf, 1 with brown gravy, & 1 with ketchup for leftover cold meatloaf sandwiches & they are really good. God bless you & yours, the viewers & everyone please stay safe. The NuWave works for most things like a toaster oven. It doesn't get hot enough for some things.

A regular oven will be a bit different. You may need to do a little experimenting. I'd go with 375 f. and watch it until it looks good and done.

I prefer bell pepper…. But didn’t have any and used diced celery instead…. And my onion. Used the bread I had and added my own spices…. Including sage. I’m just trying to remember how long and at what temp I should cook it. Did you add an egg? I was too busy talking…. Lol….. What temperature do you cook it on. Even when i cook it on 350 or 400 its still red inside. Its so annoying i like my meat well done. Idk if its cuz its a toaster oven which is different from a regular oven Is it better to leave it uncovered in oven cuz i usually put aluminum foil on it but it should still cook My regular oven doesn't work so I use a toaster oven to cook stuff

Just cook it longer. Lower the temperature to give the inside time to cook before the outside burns.

This is great! I would have never thought to use Stove Top Stuffing for the seasoning!! It's perfect!! In case anyone is interested, go to Amazon and type in mini loaf pan. You can buy pans that hold four, six, eight, or 18 loaves. You can make everything from bread to meatloaf to mini lasagna in them. I just bought the six and eight loaf pan. They are wonderful!! You can make them in batches and freeze them which is what I plan on doing. The one I purchased was from Wilton (eight loaves) and Circulon (six loaves).
