I make these for my family and they are a huge hit! My cousin says I can’t come to Christmas without them. Great recipe and super easy.

Hi Charlie and Janet ! It’s been a little while since I have said hello . I have been sick and I am going to make these muffins, it look simple to make and taste amazing. I will suggest that they have it for Saturday morning coffee . l am cooking son’s belated birthday dinner Friday . ❤ I am making his favorite cake which is carrot cake . I don’t have a go to recipe because we love everyone we have tasted lol Do you have a favorite recipe ? I was thinking in about putting crushed or tidbits of pineapple . I have never put it in a carrot cake before . What are you and Charlie’s thought ? I am watching you fill up the muffin cups . Do you a mini cookie / batter scoop ? I hope you have a positively great report/ test results today . What are both yours and Charlie’s favorite thanks giving side dishes ? I think mine is stuffin with the rich turkey broth gravy. Hi Pamela. Good to hear from you again. I hope you are feeling better. I just used a teaspoon when filling the muffin tin, because my cookie scoop was too big. Charley's favorite dish is dressing! That's all he talks about is how he can't wait to eat the gooey dressing. He hates dry dressing. He loved my Mom's the best. He's hoping some day mine will be as good as hers was. I love sweet potato casserole! His visit today was a followup visit from when he was in the hospital a week or so ago. He had a bacterial blood infection and I'm still putting IV antibiotics in him at home until Dec. 6. Other than that he's fine. He misses getting chemo though. I love carrot cake too. I've never put pineapple in mine, though I know a lot of people do. I will try and post my recipe here, if it isn't too long. 2 cups sugar 1 ½ cups oil 3 cups grated carrots 4 eggs ½ teaspoon black walnut flavoring 1 teaspoon vanilla 1 teaspoon cinnamon 2 cups self-rising flour 1 cup black walnuts Mix ingredients with large spoon. Bake in greased and floured tube pan 350 degrees for 1 ½ hours. CREAM CHEESE ICING 1 3-ounce package cream cheese 1 tablespoon milk 1 teaspoon vanilla 2 ½ cups confectioners’ sugar Blend cream cheese, milk, vanilla and dash of salt. Gradually add confectioners’ sugar, beating until icing is smooth and of spreading consistency. May be necessary to add more milk. GLAZE 1 cup sugar ½ cup buttermilk 1 tablespoon Karo syrup 1 teaspoon baking soda Boil 5 minutes. Pour over cake when cool. I usually use the cream cheese topping, but you could do the glaze if you like it better. Tell your son happy birthday! I hope you have a very happy Thanksgiving!
