Thanks for the fun time of cooking and canning!! I've been canning for years and some liquid often bubbles out, even when pressure canning. Your seal looks great to me. As long as the center of the lid doesn't pop up and down when pressed. When I have liquid at the bottom of the jar, and not at the top, after the jars have sealed and cooled, I invert my jars and shake them a bit. The food settles to the bottom and the liquid now covers it. Another thing that has been super helpful for me when I want to can tomatoes is to store the tomatoes in the freezer until I have a day to can, can, can. Sometimes I don't have enough tomatoes to make it worth the time and mess. When my tomatoes ripen and I'm not using them all fresh, I cut out the top/core, then put them into a gallon ziplock and put in the freezer. I keep adding to the ziplock til full, then fill more ziplocks as needed. When I have an open day on my calendar to do all of my tomato work (spaghetti sauce, canned tomatoes, salsa, stewed tomatoes, etc), I pull them all out of the freezer the night before. In the morning they are thawed and the skins come off without the boiling water step. I take the cores out before freezing because it makes this step much easier. Also, if my jars are already clean (I always store them with the cleaned used lids in place to keep any dust or buggy critters away), I sanitize them by placing them in the oven on their sides and set the oven temp at about 200. I pull them out as I need them. These are just a few tricks I've learned over the years and hope they can be helpful to you. Thanks again. I do the same thing with washing the lids and jars and store my jars with the lids on to save a step🙂I was happy to pass this trick on to my mom, who has canned for 50 years😉

Hi Dawn. Those tomatoes are fine. You did all the right things, you added lemon juice and processed them long enough. They siphoned, but still sealed. Just wash the jars, remove the rings and be proud of all your hard work. I loved this video! Can't wait to try the cookie dough Bundt cake

I would agree! I’ve canned tomatoes to use in veg soup and chili. Mine did the same thing and they were fine.

Are you allowing them any length of time to sit in the canner before transferring them to your cooling location? Sudden temp change causes siphoning from what I’ve learned. Contact your local county extension office for additional assistance.

My family does birthdays very similarly. When it’s your birthday, you pick dinner and the special treat, and everyone else gets to keep their opinions to themselves about your choices. We never did many gifts for birthdays, partially from being poor. As an adult when I’ve asked friends what treat they want for their birthdays they always get confused because they think it has to be cake for some reason, multiple friends nearly cried when I said I would make them whatever they wanted. Made me realize my family did birthdays so much better than other families that had more money and it’s lead to me having way better memories than others. It’s absolutely more about the being together.

The tomatoes are safe as long as the lid is sealed. Be sure to let your jars sit in the water bath canner with the lid off for 5 minutes after processing is complete. Sometimes liquid will seep out if the jars are too full with not enough headspace. The cakes look awesome. ❤

Dawn, I have been watching your channel since February. I think I have watched all of your videos! This probably sounds silly, but I get so excited when you have a new video. We are a blended family with 5 children (ages 5-14). We live in Clinton,Mississippi. I work from home and watching your videos have changed my life. I have decluttered so much and it is such an amazing feeling. I’ve still got more to do, but we have gotten rid of so much stuff and I’m shocked how freeing it is to have less. You and your sister, Diana, are such an inspiration to me. Thank you for all that you do! You have no idea how much you are changing lives. 💜

When you do the tomatoes they need a 1/2” headspace and when they’re done, you turn off the heat and take off the lid and let them sit for 5 mins before removing them. The sudden change In temp makes the liquid escape. They should be fine to eat though.

Can't wait for your Bundt cake recipe book to be released! I stopped baking cakes quite a few years ago. I decided I want to start making Bundt cakes for my sons and their families after watching your videos! I've watched your videos for 3+ years now. It's been fun getting to learn about you, Tom, the kids, your parents and of course... your sister Diana and her growing family! We live in Cottage Grove, MN so aren't very far away from you! We got a good start on decluttering. In the course of just 4 years, both of my parents were diagnosed with and passed away from cancer. I've been stuck in the grieving process and finally feel ready to tackle decluttering our lives now. We've been married for 40 yrs and have a LOT of stuff to prove it! 😄 I'm 59, but am on disability, and no longer work. I spend a lot of time with our 6 beautiful grandkids! They range in age from 10 to 24. I still have a lot of time to devote to this decluttering process. I'm so happy that I finally feel mentally ready to start. My hope is to be finished by the end of next year... or sooner! I am so looking forward to no longer being a slave to our stuff! 😁 You're a huge inspiration! Thank you for sharing all of your helpful experience and information!

Hi Dawn, try Souper cubes (or equivalent) for freezing foods like chilli, they are amazing! I freeze chilli (and lots of other things) in them, then remove once frozen and then put the portions in to large baggies so you can just keep reusing the large bag as they don’t get dirty really. Plus because they freeze into square like shapes, they can be stacked easily and don’t take up loads of room in your freezer 🙂

Hey Dawn, everything looks very good. It occurred to me to mention that when adding heavy ingredients onto cake batter , ie cookie dough or fruit etc, be sure to fill the pan 2/3 full first of batter, add filler & top with the last 1/3 . That way you ingredients won't settle on the bottom. Another thing most folks don't think of is that it's fairly easy to slice a Bundt cake in half horizontally add a filling like jam, fruit, lemon curd , pretty much anything. Then you'll be able to add frosting, drizzle or powder sugar. Some differing options. 🥰😛

You can rinse the disposable bags and dry them. They don’t have to be one time use. I put them over a spatula in the dish rack or on the top shelf of the dish washer, with it slightly open (not through a cycle).

I don't have a dishwasher, but i wash mine by hand. I do them in the clean soapy water before I do the rest of the washing up, and then a quick hot rinse.

@@thatswhatisaid8908 I haven't bought a box of storage bags in eons because I wash out the ones I use. I just drain/dry mine upside down on my counter drying dishcloth. Dry overnight and put away in morning.

Instead of canning them I freeze them. When you need them you just run them over warm/hot water and the peel slides off then you can just put them in whatever dish you are going to cook. Saves a lot of time and no worry about the jars sealing.

Dawn, thanks to your no-nonsense approach and considering everything in my home as inventory, it makes it so much easier to decide what to keep and what to get rid of. I’m currently cleaning out my basement and the inventory approach has created a huge amount of “get rid of” and trash!

Tip: If you cook all your veg down to release the water first before adding the other ingredients it will freeze better and will be less watery and more flavorful! Great video!

Yes, I agree with cooking them a little before canning. The scalding to skin them doesn't cook the entire tomato enough. Plus you want your larger chunk tomatoes cooked enough not to encourage any bacterial growth. And yes, I would also watch the headspace. But kudos for using boiling water to top off your jars, however it does water down the contents somewhat. As long as the jars remain sealed, the food inside should be okay. Your fellow gardener will be happy to receive those yummy tomatoes.

I chuckled when you said cake stands might be your one weakness. We've seen your throw pillow collection, Dawn. 😂 About the tomato siphoning problem. The rule I've always heard is it's not safe to store if you've lost over half the liquid in the jar. You could still eat it right away, though.

So with your to tomatoes: you didn't give them enough time to cool before taking them out of the canner. When your timer goes off you are supposed to turn off the heat and let the jars sit for 5 minutes before removing them from the water bath. They are still percectly safe as long as the lid is sealed and there is a good bit of liquid. Just wash them up as usual before giving them to your friend! Remember to tell him not to store with the rings on in case your seals fail while in storage (which has happened to me).

Dawn and Lynn, This is what I was going to comment too. Turn the heat off and let them sit a little while longer on the water, then you'll have less siphoning. Also heating the tomatoes before packing the jars will help air escape. You'll fit more fruit/tomatoes in the jar and be less likely to have so much of the fruit floating above the liquid in the jar. I love your channel.

Canned tomatoes make great chili! Just in case you ever want to use your own canned tomatoes for something. I add a can of Ro-tel to my chili. It’s just canned diced tomotoes with green chilies and some hot spices in it. It’s a quick hack for spicy chili. I can’t digest beans right now 😢 so I use cubes of sweet potatoes instead. Cube them and microwave them to cook them before throwing them in.

What a cozy video on this first day of light snow in the Twin Cities. I love your obsession with Bundt Cake... maybe I need to see if we have a mix laying around and try to make one. I made my first omelet yesterday and am realizing I should try a "new thing" every day, even if it's something small. I am 100% in agreement that going more minimal is amazing. Just finally got my family to agree to go through a bunch of winter coats, so those will get donated today!

What? Snow??? Wow! I’m in NC. We are still in the 80’s some days. While the heat is starting to get to me, now that I’m getting older, I still don’t think I would want snow in mid-October.

Dawn, you have inspired me to purge, purge, purge! I’m 60 y.o. & disabled. So I’m not able to do long sessions of decluttering. But I have committed myself to empty out my sewing room that turned into a junk room! I can’t count how much $$ I have earned by advertising on FB Marketplace! I’m very close to saying I have completely decluttered my sewing room! I’m now down to grouping like items together (e.g. scrapbooking items in one location in my room, patchwork balls supplies all together, etc.) Not only have I reclaimed my sewing room, I’m getting that excited feeling that comes from having everything organized, again! 😊. You know what they say… you spend the 1st half of your life acquiring “stuff”, & the 2nd half of your life getting rid of it! If only I knew what lay ahead of me in my 20’s, I would have saved SO much $$!!!!!

Tip for can in tomatoes. When the process time is done shut off the canner and leave the tomatoes in for 10 min or so to cool down slowly. It will help with less syphoning. It’s normal for tomatoes to do this. They will be fine if they sealed.

We are going to the Scottish Highland Games Saturday and then having 4 friends over for dinner. We cooked chili and set the table today so just a reheat and bake the dessert tomorrow. SIMPLIFIED!! That enables us to do lots in a day!!

I totally love bundt cakes, I make them all the time, I can't wait for your recipe book. I just made a pineapple upside down bundt cake for a birthday, my first time and it turned out great!! Bundt cakes are always a hit.

Stasher silicone bags are great for the freezer! You can put them in the dishwasher to clean aswell (just put them over the prongs of the top drawer). They do a size that’s great for single portions (they do bigger and smaller aswell)

I have been canning with my Mom my whole life...as long as your seals suck down (I usually hear them pop) then you're fine. Sometimes a little liquid can seep out. My mom always covers them with a towel so they cool slowly, and you can hear the jars "popping" as they seal. Invert them if they separate. I noticed advice from Faith & I couldn't agree more. That's exactly how my mom and I do it...core, freeze, thaw, peel, and then make all your sauces. Saves lots of time by doing it all in one day. You're doing amazing!! Love the cakes! Adorable! If you freeze chili in muffin pans for about an hour then you can pop them into a zipper bag. You can pull them out as individual servings and only use one bag. It makes it a lot easier.

Oh I have been there with the liquid spilling out. Next time, after the time is done, open the lid and let the water stop boiling. I left them sit a little longer now too. It’s the drastic change in temperature that makes it leak. Hope this helps and makes sense. You’re fantastic and doing great!!! Life is a learning journey ❤

When done boiling turn, off burner, wait 10 minutes, open lid a tiny crack, wait a few minutes, open a bit more, wait 5 more minutes take off lid and remove the jars... That should prevent any leaking ever.... Of course never fill past the one inch mark headspace.... That's how I do 😊

That cookie dough cake looks decadent. I may have to make that for the holidays. You are so fun to watch because you are so real. That is what I like about you and Cas and Dana. Your tomatoes are fine to keep at room temperature! The siphoning happens when you pull out the jars when they are too hot. If you turn off the heat and leave the jars in the water for 5 minutes it will reduce siphoning. Canned goods are fine with siphoning except when the liquid level is lower than half of the jar.

13:10 you may already know, but in case others don't, don't use metal utensils in enameled cast iron because it can scratch the enamel off and ruin the pan. I never use my bundt cake pan. Seeing you make stuff keeps making me want to use it more. They're a fun shape and easy to cut. Canned/bottled tomatoes are great for anything where you cook tomatoes. A super easy dinner in fall/winter is what I call "cans of stuff soup" and is a can of tomatoes, corn (and the corn water), 2-3 different types of beans, and whatever spices smell like they'd be good (cumin, garlic powder, onion powder, etc.).

Looking forward to the Bundt cake cookbook! I love our Seal O Meal. Even though it's another thing in the house it allows you to freeze food for so much longer. I always get air in my plastic bags. When I use cream cheese frosting out of the jar I use a hand mixer and whip in 2 oz. of cream cheese. It makes it fluffy and less sweet, and taste so good. If you freeze the tomatoes I'm sure they would be fine for marinara sauce. Then you can give your friend some of the sauce since the canning didn't work out.

Your canned tomatoes look delicious! The loss of liquid during the canning process is called “siphoning”…causes could be not enough head space (which looked ok in the video), fluctuations in heat in the water bath canner, or not letting jars sit in canner for 5 minutes with heat turned off after processing. As long as the seal is good (which if you can hold the jar up by just the lid, it’s a good seal), the contents are safe to eat. My thought is you processed them too long…did you say 90 minutes??? A quart jar of tomatoes only needs 45 minutes in a water bath canner.

Thanks for the new pasta bake recipe. Made it tonight while I made dinner so it is ready to bake tomorrow. Revised it with what I had on hand, left over chicken and bacon chopped up super small and red peppers and kale sautéed in. Looks delicious. An easy make ahead.

After you shut off the heat from the boiler canner, leave the jars in there to gradually cool down for 5-10 minutes. We all experience syphoning but by gradually heating up and cooling down the canner it helps prevent a lot of it.

In my experience canning tomatoes..we don't add water and you need a little more headspace. Tomatoes have so much water in them that it releases it as they are processing. We have that measuring tool to make sure everything is pushed down and there's enough head space at the top. I would think if they are sealed they would be fine to eat. 🤷‍♀️ I'm so excited for the Bundt cake cookbook. It's birthday season in our house and I'm excited to try them out!

Good work Dawn. The garden haul looks great. You can use your canned tomatoes for your chilli and pasta sauces or even a salsa. You could even add your peppers and chilli's to taste. They'll be a great addition to your staples instead of or along with the other jar sauces you use. You'll know exactly what's in them. Awesome, productive day and definitely the blessing of keeping everything else simplified. xx

Your Fruits of labor statement resonated w/ me ! Our house is mostly paired down. But I always mentally feel like I need to do MORE stuff . Things like volunteer, or things that I’m adding to my plate- then I feel overwhelmed. I need to learn to rest & enjoy the fruits of my labor !

Trick for the sinking !! I don't know if anyone else suggested this but if you put something in a cake and don't want it to sink, dust the thing with a little flour before adding to the cake. Works great with fruits especially. Your temptng me to but a Bundt pan !!

Hi Dawn! Great video and the cakes looked amazing! Canner here, the tomatoes should be fine if they sealed. Just remove the rings test all the seals like you did the one in the video, wash the jars well and you should be fine. Siphoning can happen even when you take all the precautions. We usually turn the stove eye off once our timer goes off, wait a few minutes (5 or so) and then remover the canner lid. One the water isn't going crazy boiling anymore we lift the rack up out of the water leaving the jars only partially submerged. We leave them sit like that for 5 or so minutes and then pull the jars out. It allows the jars to cool down some and there not be such a temperature fluctuation. This can help siphoning. Sometimes it happens anyways though, no matter the precautions you take. Just make sure you follow proper headspace and you de-bubble and if the seal is good I would call it good if it was me. 😁

While I didn't cook with you I did pull up your past videos and decluttered my back bedroom. We don't use the room so it is a storage room. Dawn, I think your canning technique was fine. If your lids are all sealed, I'd invert them in order to get the liquid over the tomatoes. If in doubt, you could take them from the jars, put them in freezer containers or bags, and use as needed. I wouldn't throw them out!!! Congrats on your new cake recipe!

@@darm1959 Wait till it's cooled off (unless you want the frosting to run/be softer), then frost it any way you'd like; not sure about the pumpkin spice one, but the way we always frost regular cakes is to freeze the cake first, that way you have far fewer crumbs and you're less likely to rip the cake when frosting it.

Hi Dawn, re caning tomatoes. I would leave a bit of space at the top. Also don’t have the lid on super tight whilst the jars are in the pan (pasteurising process). This heats up the bit of available air, and some escapes. When you remove them, tighten the lid, and lay down or stand upside down till cold. If the lid is undamaged and a good fit, they will not leak. The small air pocket shrinks as it cools and seals the lid on tight.

Use the canned tomatoes to make a delicious homemade pasta sauce. You can brown ground beef, add some olive oil, a couple of garlic cloves, then add the jar of canned tomatoes, add Italian seasoning or basil and let simmer for 30-40 minutes. You can also omit the ground beef and just do a marinara sauce. My Grandmother was Italian and she taught me how to make a delicious homemade sauce and also meatballs! It’s really super easy.

I might be head space, but the temperature shift from the canner to the counter can force liquid out as well. They are sealed and safe, if you gently shift them around you can mix the tomatoes and liquid back together and they look nicer. I fight this problem as well with tomatoes.

Dawn I do the same thing with Chili! I make a smaller separate batch that is less spicy and less veggies for the family. I have observed they don’t really eat the leftovers much. Then I make a pot for myself full of all the things I like including lots of spice and bell peppers! I have literally eaten chili every day this week😂🤷🏻‍♀️

That is how i do my lunches as well. I make a huge amount of a food dish and then i divide it up into some portions for throughout the week. That way i don't really have to cook every day and also my lunch is already made. I don't have to get take out or i am not ordering fast food or anything like that, plus i seriously save so much money by doing this. I love it, and i don't plan on changing this either because i have been doing this for years now and so far it as worked for me and my budget on finances.

Dawn, I see Diana said y'all woke up to snow this morning. So jealous! 🤣 Great video! When we have fresh tomatoes from the garden, we put them in the food processor, chop them up good & then put them straight into freezer baggies for chili vs eating canned from the store. Not sure what went wrong but I'm sure others can help you. 🙂

I often eat the same thing for lunch or breakfast for several days. Sometimes whatever it is just tastes good. 😁 I bought a bag of pre-made tostada shells for a little over $2.00. There’s about 20 in the bag but several were broken (still totally edible). I opened a can of beans and season a little. I heat up enough for 1 or 2 tostadas, add shredded cheese, lettuce, tomato, salsa, sometimes sour cream. It was a tasty and quick lunch this week.

The reusable plastic baggies are the best things. Has saved us a lot on buying ziploc baggies. Also, using the reusable plastic dish covers to put over dishes in frig saves a lot on buying tinfoil. Good video as always. Not sure where you have time to do all you do. 🙂

I had that problem with my canned goods this summer until I learned to let them sit 10 minutes off the heat before removing them from the water. That gives it more time to seal right, and I've done it twice since then and no seepage!

I’m sure others have said it, but what happened with the tomatoes is called siphoning and happens when the temperature changes drastically for the jars. The pressure in the jars is really high and that causes the liquid to come out. You can reduce the likelihood of this happening by letting the jars sit in the water bath canner a little longer, maybe 10-15 minutes off the heat. The jars are totally fine and safe to use, but I recommend washing the outside of the jar before storing or gifting.

Love your videos. If you lay your baggies flat and freeze them on a cookie sheet you can stack horizontally or vertically to save freezer space once they freeze solid

One trick I use for freezing individual soups is to use your muffin (not cupcake) tray... it holds about a cup of soup... just freeze then once they are frozen you can transfer them all to a freezer container or bag... then you can just take out one or two frozen soups and reheat it. I do prefer my silicone muffin tray as it is easier to get them out after frozen, but the metal ones work too, just let it set for a couple minutes or dip the bottom into hot water to release them.

For freezing food, we use Stor-Keeper plastic freezer storage containers. They stack really well and they are definitely reusable!

Might have other comments that have said it first. The best test to make sure they sealed was when you held it up and they didn’t pop off. Just clean the jars and you’ll be fine (but don’t put the rings back on). Great, enjoyable video. Thanks for bringing us along😊
