Hi Miwa , my name is Paul. My daughter and I made your salmon miso butter recipe for dinner tonight. It was really flavorful. We used 2 pieces of salmon, potatoes, cabbage and a bag of frozen mixed veggies that had carrots, onions, broccoli, green beans and mushrooms. The water from the cabbage boiled off and caramelized the potatoes and salmon beautifully. The flavors were intense and pleasant. Thank you so much for sharing your cooking culture. This was our first Japanese recipe and we are looking forward to trying more soon. I think miso soup will be up next.

So excited to try this recipe!! I usually use miso and some other ingredients to make a sauce for ramen. Sometimes I use chopsticks when I'm cooking because I think they're easier and nicer to clean :)

I've never made japanese food at home before, but started following your channel and felt so inspired! When I saw this recipe, it seemed so doable. I must say that I nailed it! I cut sugar in half, doubled butter 🥲, and subbed out veggies with: bok choy, carrot, onion and oyster mushrooms. Thank you for this amazing recipe and making it so easy to follow!

I am living in Japan and I often made this but without so mushrooms, cus my boyfriend doesn’t like mushrooms. Your pantry video has helped me figure out Japanese supermarkets a lot! But I still wish ingredients I’m used to wear available easily… it must be a shared feeling for Japanese living abroad

I have to say I was a little afraid of the outcome because I'm not a very good cook and I don't think I used the right pan, but it stil turned out delicious! Thanks for the recipe!

Wow. How beautiful and tasty looking. I really want to try the spices. Americans don’t usually use chopsticks worth cooking. We would use a spatula or tongs to turn items. Also, I like the idea of getting the salmon. Salmon fillets are larger here and more expensive. It’s often baked or grilled in homes.

I actually stayed with my host family in US when I was in high school, and my host mom baked this gigantic salmon marinated with Italian dressing . that was soooo good!! Thank you for reminding me a good memories!

Miwa you have shown me another recipe I want to make immediately--but I have to wait until I make the others I'd planned on making this week! :D There are worse things to have to wait for haha. Also, I love that pan! I've never seen a pan that you can remove the handle when you don't need it. I have a small stove and that would help so much!

yey! so glad to hear this! this is one of my all time favorite! the pan is very convenient to use! but it's not so durable. I've been using it for a year, and already start to stick at the bottom. I'm still on the hunt! haha

I used the miso paste recipe to cook in a pan with one portion of fish (1about 1/3 of the recipe) for with my breakfast today, it was DELICIOUS!!! I had it with rice sprinkled with nori komi furikake, kimchi (home made), ssamjang, pickled daikon and nori seaweed (I made little parcels to eat in one bite). It was AMAZING!!!! And it was super easy to make too, only about 15 minutes, most of which was hands-off. :)

Did you know that you can use the side of the potato peeler to remove the potato eyes? I only learned that in my 30s 😂 It’s really convenient!

Thank you very much for your comment! Yes, chicken will work. Just make sure to cook it longer than salmon. Pork might work but I don't recommend beef for this since the meaty smell is too strong. I've never been to Japan, but where I live has a lot of Japanese immigrants, when workers at the car manufacturers brought their families, so I have access to a lot of Japanese food. However, I'm having trouble finding shiso (is there a season where it's more common?) And mirin (the Mirin I found is mostly corn syrup or "mirin flavored teriyaki sauce"). Can i use sake, rice vinegar, or cooking rice wine instead? Also, I can find only red, white, and red+white awase miso paste. I don't mind the strong flavor of awase miso in my miso soup, but should i switch to white miso paste when cooking, instead of yellow?

shiso is in abundance in summer!! I hope your local supermarket would start to carry it near future! You can certainly use yellow miso!! Red miso only would be too overpowering, but other than that, it should be delicious! for mirin, can you mix corn syrup and sake for equal parts? we need some sweetness + alcohol to hold the moisture and reduce the smell of fish. I don't know how sweet your corn syrup is. if you think is too sweet, you can reduce the amount from the next time! I hope this helps!

I see that you braised the fish but, I'm concerned about overcooking the salmon. Then I see you add the vegetable after the fish is already cooked. My Question: Is the a fish more tough or less salmon flavor?

Sorry for the late reply! I have been making this for a long time, but the salmon comes out moist thanks to the condiments. in terms of the flavor, it might loose some of the flavor. I hope you will give it a try someday to see how you enjoy it! thank you again!
