Incubate: wrap the pot in a large towel (or a couple of towels to keep it warm) after that bring it in a heavy bottom pan, and then place a tight lid. Choose the lowest temp of your stove to culture the yogurt for 2hrs or more.

Tried others' recipes few times but didn't come out perfect as Bangladeshi doi. It used to be sticky. But I tried your recipe yesterday & it was perfect though I didn't make the caramel. The doi was white but tastes awesome. Thanks for the recipe.

So MISTI Doi uses regular white sugar? I thought the brown colour came from palm sugar. But now this great video shows that it was just caramelized white sugar Thanks for the beautiful recipe

You could use palm sugar. However, let the milk cool a bit before adding the sugar. Then, either try setting the curd by the usual home method or steam it as in the video above.

Traditional Bengali mishti doi contains aakhi gur as the main ingredient instead of sugar that's why the doi becomes red in color and also develops a nutty taste..this version is adopted by sweet shops later when aakhi gur became costlier

fifitta world I usually left it overnight and depending on the weather if it’s cold outside then I would open the light of the oven otherwise if it’s hot I let it be I do put it in the refrigerator in the morning.

Well u can't say no to Kolkata's most popular sweet desserts like Mishti Doi/Sweet Yogurt, Rasogolla, Jaggery Rasgulla/Nolen Gur'er Rasogolla, Gulab Jamun, Amriti whenever u r offered to eat. Ummah Saleha lol well I’ll be honest, and it may be my fault, although I followed the recipe exactly. Except instead of incubating at the end, I put it in the oven at gas mark 1 for almost 2 hours and it still didn’t set. Tbh it tasted bad, not sweet enough at all and quite bitter, so I’m afraid it’s going to have to go in the bin. It may be that I just couldn’t make it myself. My mum usually puts it in the oven for 2 hours at gas mark 1 and her dhoi sets well.

আমি চেষ্টা করেছিলাম বানাতে, হয়নি। মনে হয় কোন একটা স্টেপ বাদ গিয়েছে। দই বানাতে গিয়ে দুইটা প্রবলেম ফেইস করেছি। ১) দুধ ঢালার পরপরই চিনির শিরা টা একদম জমে শক্ত হয়ে গিয়েছিল। ভেবেছিলাম কোন একটা গণ্ডগোল লাগিয়েছি, পরে খেয়াল করে দেখলাম ভিডিওতেও একই অবস্থা হয়েছে। ২) টক দই মিক্স করার পর যে ইঙ্কিউবেট করতে হয়, তা আমার জানা ছিলনা, তাই আমি চুলাতে অল্প আঁচে বসাইনি। তাই আমার দই অর্ধেক শক্ত, আর অর্ধেক পাতলা হয়ে গিয়েছিল। Anyway, that doesn't means Banglar Rannaghor is bad. I really love this channel. I try to watch every single videos they upload, both in KZbin and Facebook. Go ahead, I wish your great success.

I think it is dangetous too. Just use the safest traditional way (overnight in a warm place) or use a thermos, it works too.

I tried this recipe and it came perfect. The only problem is due to weather here ....my curd got set in 8 hours. (I did not put it on gas on low heat as shown here, I kept it traditionally way with warm towel wrapped and inside a preheated & then turned off oven)
