I just tried this ...have set dahi to ferment ...tip, warm the milk before putting in caramelized sugar..or it will crystallize..and you will think that you ruined it ..but I case it does crystallize..just keep warming the milk and stir it well

We usually set doi at home overnight, in a closed vessel without any heat source. Won't this set unless set in oven?

it should.. looks like same process as setting yogurt at home, if the milk is luke warm and you cover up the container well to retain the heat, it still works

Iam confused after transfering milk in pot we need to put in gas in low heat for 2 3 hrs or to keep aside in room temperature heat ?

I am confused with the steam steps, do you add water or it's dry? If it's dry then it might have chances to get burnt, isn't it?

It's dry, It's not even steaming actually. The idea is to keep it in a warm environment. So the temperature of that pot is not too high to burn the cloth and the cloth is kept in the pot for even heat distribution and also to keep the pot warm for the needed time

It is confusing when you say keep on lowest heat for 2/3 hours. Does it mean set aside in a less warm place or keep on less heat.Please help

Keep it in a warm place I guess... My grandmother puts the curd near the window where we get full sunlight and it sets really beautifully.

Such a nice recipe. But when we make normal doi at home, we don't usually steam it. We just keep it in a warm place overnight and later refrigerate it. I don't know whether it'll work on mishti doi or not, since it contains powdered milk and caramel.

1st one has 4 cups of milk where the water amount is 3 tbsp n 2nd one has 3 cups of water where the water amount is 1/4 cup. Is there any difference of sweetness between these two?

I doubt you could do it in the microwave as this needs a warm place for the bacteria to grow. A sunny/warm window will even do. You could heat the milk up in the microwave initially, but it would be hard/maybe impossible to caramelize the sugar in the microwave. You just microwave the milk a minute at a time (on full power) and stir between each minute until it's bowling. Add your sugar. Let it cool to the point you can stick your finger in it for 8 seconds. Add yogurt and keep warm until set.

what does hung the yogurt mean? and i guess the differences are the measurements. it may be affecting the texture therefore we can't really tell the difference through the video

Put the yogurt in a strainer or seive over something to catch any liquid that comes off the yogart while it is brought up to room temperature. I "hung" my fine mesh strainer in a cereal bowl.

the required environment for the doi to set is warm, not cool. so I don't think chilling would be a good idea. but you can put the container covered properly in a warm place in your house, like in the kitchen beside the stove. it should be ready within a day or two

Those are Mud pots called "Kulhads". I am not sure if they are available in regular Canadian general stores. But you can check your any nearest Indian or Bangladeshi store that sell food stuff/items specifically related to these regional Cuisines, you might find 'em there :) ✌️🏾

The heat is necessary. The curd won’t form if you don’t give it any heat. Now either you can do it on a stove like in the video or you can keep it in room temp for 7-8 hours if you live in a warm place. Some people toss it in the oven too.

How the color of the sugar water is changing from white to reddish?

That process she does caramelises the sugar, it start to change colour after being exposed to the heat. That’s what gives the distinct flavour and taste to mishti doi.
