Mitarashi dumplings made with Glutinous rice flour and rice flour.
Drizzle plenty of sweet sauce thickened with potato starch.
It is also good for cherry blossom viewing with sticky dumplings.
▷Ingredients(about 20 dumplings)
■Dango(Dumplings )
70 g glutinous rice flour(shiratama-ko)
60 g rice flour(joshin-ko)
30 g sugar
90g water
■Mitarashi an(salty & sweet sauce)
2 tbsp sugar
1 tbsp sweet sake (mirin)
1 tbsp soy sauce
4 tbsp water
1 tsp water
1 tsp potato starch
▷How to make
1. make dumplings. Mix glutinous rice flour, rice flour, and sugar with water.
(If the mixture becomes too soft, add more rice flour)
2. Cut into 10g pieces and roll into dumplings.
3. Bring plenty of water to a boil and pour in the dumplings. Mix the dumplings with chopsticks so that they do not stick to each other. When the dumplings float to the surface, boil for 2 minutes.
4. Put the boiled dumplings in ice water to cool. When the surface of the dumplings has cooled, transfer them to wet kitchen paper.
5. Stick the dumplings on bamboo skewers. Heat a grill and lightly sear the surface of the dumplings.
6. Make the mirashi-an (salty sweet sauce). Put sugar, sweet sake (mirin) , soy sauce and 4 tablespoons water in a pan.
7. Dissolve 1 teaspoon of potato starch in 1 tablespoon of water.
8. Bring ⑥ to a boil over medium heat. Once boiling, add 1 to 2 teaspoons of potato starch (⑦) at a time to thicken.
9. Pour the Mitarashi An over the baked dumplings to complete the dish.
Tips on how to make the dumplings
1. The dumpling dough should not be too dry when it is made into a single dough ball, and the dumplings should be firm when broken into pieces.
2. If you do not have a baking pan, you can use a Teflon coated pan to brown the dumplings.
3. Mitarashi An becomes thicker as it cools down, so it is recommended to make it looser.
