Loving this easy yet delectable cake recipe... It's our family favourite, not too sweet with a lovely tang from the lemon and mixed berries. All our recipes are low in sugar, so do adjust to your liking.
Mixed Berry Lemon Cake Moist Recipe
Cake Mould : 9.5inch Round
250g Unsalted Butter
440g Cake Flour
1tsp Baking Soda
1tsp Baking Powder
Pinch of Salt
Juice from 2 Lemons
Rinds from 2 Lemons
350g Full Cream Milk
190g Caster Sugar
4 Large Eggs
200g Frozen Mixed Berries (thawed)
Cream Cheese Frosting
200g Cream Cheese (Room Temperature / Soften)
40g Unsalted Butter (Soften)
35g Icing Sugar (Sifted) (you can add more to your likeness)
1/2 Lemon Juice
Topping Decoration
Strawberries
Blueberries
Lemon Rinds
Dried Rose Petals
