I would say the only advantage the reverse shake has is that when you’re done, you can pour without a strainer, so there’s nothing that can damage your foam bubbles. I have definitely noticed better thicker foam with that method

I'm curious how it effects dilution as well. If the ice is in tere for a longer shake it should increase dilution in theory... but by the time you get to it the cocktail is already cold, so the ice is melting less and it's not a ton of extra time so it may be very minimal.

I don't have that many observations regarding the reverse shale, but for me it feels much more messy and since I have to get rid of the ice anyways I end up making more things dirty. It's my personal opinion but dry-wet-drink approach is what best works for me so far.

I’m glad your doing this. I’ve challenged the thought behind a lot of bartending techniques and trends myself. Everything from double shakes to super juice. I’ve found some are more effective than others. Looking forward to this series. 🤙🏽

I like super juice for shelf life and cleanliness.. squeezing limes every day is messy and expensive

@@RobsHomeBar I think super juice is great and make it for events all the time but I don't think it's apples to apples with fresh juice (or should I say lime to limes lol). I still prefer fresh for my home bar.

Im not a bartender. New at making cocktails at home. Love your vids. I have had trouble with the dry shake. Ive had more success with the reverse dry shake, because like @RobsHomeBar said, you dont need to strain afterward. But im glad you mentioned at the end of the video that you arent going for the biggest and tallest head of foam. I think i was getting carried away trying to get the thickest head i could..

This is such a great idea. Flow of consciousness. This is how we learn and it’s great to talk shop and learn at the same time. It makes you better at what you are doing. I learn this way, like questioning in order to break it down and understand the why of the technique! As far as the dry shake. When you fold meringue into anything, you have to be very delicate with it, so that you don’t flatten it and kill the bubbles. I always find when I’m trying to remove cubes from a dry shake it’s difficult to be gentle. And no matter how I do it I break the bubbles too much and I don’t get a great result. But I’m still working on my dry shakes in general. I love this idea Carl. It’s an honest take and I look forward to more. Happy new year!

The AMOUNT of people who comment saying that I should double shake is crazy! Like you said, I can get a great foamy head with just a single shake, and in some cases, I've even gotten too much foam from a single shake and end up pouring it away otherwise the head would be too thick (or overflow the glass!)

So I have an interesting method for a double shake. I still do it in the normal order but my first shake I do it with one ice cube to prevent the tins from separating. This limits dilution and adds a whipping effect which I assume helps with the emulsification. And you can do both shakes for about 5 seconds each so it’s still taking you about the same amount of time shaking total. Just wanted to add my two cents for anyone interested!

I can totally see that working for sure. When you are using the 1 ice cube, isn't a bigger piece? Like over an 1" wide?

Nope. Just 1 regular size ice cube. Just that little bit of cold helps seal the tin and whips up the egg white.

I love this stuff! So, minor misconception about my name, but I love to cook... Everyone has Instant Pots now and I always had a regular pressure cooker... My wife bought me one years ago and it's very helpful at certain times... So, I can make short ribs in there in a small amount of time... I tell everyone, I could use an instant pot and get it to 94% perfection... I could also braise it myself on the stove for a couple of hours and get it to 97% perfection... Is it really worth the extra time, where the Instant Pot, it's just there... Sometimes yeah... I don't like hacks or shortcuts, I want to zen out, maybe have a cocktail in my hand, and put the effort into an amazing meal that my wife won't appreciate... It's like the shakes to me... The regular ass dry shake incorporates the cocktail and the head better to me... It always has... The reverse dry shake gives me a thicker head, but it seems disjointed from the cocktails at time... I think anything that saves you a step gives you a solid cocktail, but like the Instant Pot, you're talking minor differences... I'm just shaking a cocktail for my wife and myself, or parties, but I'll take the time to dry shake, because on a chemical level, the transition and mouthfeel is what I would like best with that.... I could try it both ways and I know my wife would say that she doesn't give a shit either way...
