I love Poh's adorable style. She makes everything beautiful. Been a fan since Master Chef. Some will insist the ingredients should be pounded together to release more flavour, but honestly who cares as long as the curry tastes great! She's got fantastic recipes in her book.

I am recently watching MasterChef Season 9 Ep 21 on invention tested. 1 of the contestant, Tamara used your Roti technic on her Pineapple Roti with Lemongrass Ice-Cream & Chili Caramel. Her dish wowed the judges & also a well known Thai Cook guested judge, David Thompson I cook Poh recipes as well. Her recipes really make my days.

I loved Roti Canai when I was in Malaysia, but my favourite was Roti Canai Pisang (Banana) - its a desert roti, would you just add some chopped banana to the pasty and then fold over the pastry over before you fry it? I thought I'd need one of those big round frying plates to make it at home, but it seems I can do it with a regular frying pan after all! Thank you :)

I'm looking how to make a very similar dish. I had it at a restaurant but they changed the name so it was hard to look up. Every video i watch or anything i read is not exactly it, which is strange because it looked so simple! Like, really simple. I think it was Roti, served in thin pie shapes, with some type of curry dip. The dip had no chicken, but lots of potatoes, its a dip, not part of a large dish.

How long do i knead the dough. Got my husband to make it butvit was a flop. He didn’t knead the dough long enough. It wasn’t smooth and after resting overnight was not soft and pliable. Roti was flat n hard

The ingredient is called “belacan” (pronounced “Bur-La-Chant”). It is fermented shrimp paste and can be found at Asian grocery stores. Good luck!

Curry leaves can be hard to find outside of South East Asia. But you can always substitute it with bay leaves and a squirt of lime juice. Still a bit far fetched and stripped down without the curry leaves but that shouldn't be a problem for most of us

That malaysian curry is inspired by the Indian culture there. Coconut is commonly used in the southern part of India (the influence of tamils in Malaysia). Also the Roti is an INDIAN word for round bread. It’s the staple food of India. P.s : The word CURRY is derived from HINDI😁

tbs coconut cream 10 sprigs of curry leaves 1 star anise 2 whole cloves 1 cinnamon stick 1 1/2 kg chicken thigh fillets 500g baby chat potatoes, peeled, halved and parboiled 2 bird's eye chillies deseeded and halved lengthways 500ml coconut milk 1 Ttbs salt 1 tsp sugar Rempah (wet spice paste): 3 Tbs ground coriander 1 tsp ground cumin 1 tsp ground fennel 15 dried long red chillies*, deseeded*, soaked in boiling water until soft, drained and chopped 20g belacan 25g fresh turmeric root, peeled and sliced 3 cloves garlic, peeled, sliced 270g red eschallots OR Spanish onion, peeled, sliced 1/3 cup vegetable oil * Dried chillies - There are several types of dried chillies. For this recipe please choose the type that are about finger sized. The smaller ones are very hot and the broader, larger ones mild. Also pleasenever replace dried chillies with fresh ones as they don't impart the smokiness of flavour and depth of colour required for this dish. * Deseeding chillies - Before soaking, snip chillies into quarter segments with scissors into a colander with largish holes and then shake the seeds out.

Woolies should have it. It'll say shrimp paste or belacan. Or if you walk into a Thai grocer, look for Gapi. Gapi is slightly sweeter.
