Oh my goodness!!! I made your mock apple pie today for my mother and daughters! We are all floored how the Ritz crackers even looked like layers of apples and tasted like apples and smelled like apple pie! Thank you for sharing this amazing pie recipe! It was delicious, especially with vanilla bean ice cream!

Josie, this looks really good! I have made a mock apple pie before using sliced zucchini. And, I've made a mock pecan pie using mashed pinto beans. I don't know where in the world my recipes are for those, but I'm sure there's a recipe for each on the internet. Also, I have made vinegar pies before. My husband LOVES vinegar pie. Well, he says he only likes two kinds of pie--hot and cold. When we were young and did not have two nickels to rub together, I looked at every way I could to make our home run smoothly. You get really creative when the cupboards are "slim". Praise God, He always provided for us and we never had bare cupboards. I look back and KNOW that GOD was our Provider...and He still is! And I love hearing Baby Howie's little voice! I'm sure Rowdy will sound just as precious. You are blessed!

Hey Josie and Cheyenne! Good to see you Blade and baby Howie! I have heard of Mark apple pie but I have never seen or known of anyone that made it. I’ve made a mock apple using zucchini -let’s just say I didn’t fool anyone. Blade, please be careful working in that heat- make sure you are taking electrolytes.

Oh my gosh, heart attack diabetes pie! Fat and sugar pie lol! Is there anything redeeming in this pie? Arhats a cookie pie :) can’t imaging it tasting like apples? Thanks for making this never heard of such a pie! I have heard of mock apple, but thought it had fruit!

It is not a lowfat, sugar free pie. It does taste like apples somehow.
