thank you, as always, for details. do you use the skimmed fat later for cooking - for e.g., frying vegetables or so - or simply throw away?
@ModernPepper3 жыл бұрын
Hi Arina Ignatyeva! THANK YOU🙏💚🙏. And, you always ask excellent questions! No, I do not use the skimmed fat to cook with. I discard it completely, but that is just my personal preference. NOW, if it was rendered pork fat, I may keep some to cook with later. Kalbitang tastes much better if you enhance by adding different parts of beef! The broth of kalbitang with only short ribs tastes somewhat bland^^ hope my tip is helpful! By the way I am enjoying your video
@ModernPepper3 жыл бұрын
Hi Sun Jung! Yes, you are doing it the restaurant way👍. At Korean restaurants, they always have a big pot of beef broth made from various beef bones to draw out more deeper flavors. Galbitang ribs are pre-cooked separately. And once the order comes in, the galbitang is reheated with more of the delicious beef broth, and all the fixings. At least, this is how it was done at my parent's Korean restaurant. Thank you for watching🙏 Here is my written Galbitang recipe: www.modernpepper.com/post/galbitang

Be careful w the beef dashida, it has MSG, a neurotoxin. But her method of making this dish is spot on. I find her recipes more authentic than Maangchi’s.
@ModernPepper3 жыл бұрын
Hi Jamie Lee! Thank you for this huge compliment🙏🙏🙏. Glad to hear that you found it spot-on🤗 As for the Beef Dashida, I always make this an optional ingredient, not a requirement. (I also provide a link of the Beef Dashida in this video's description box which contains the ingredient list, as listed by the manufacturer.) For this GalbiTang recipe for a serving size for 5 - 6 adults, 1/2 tablespoon of the Beef Dashida is used. Again, not a requirement. Here is my written GalbiTang recipe: www.modernpepper.com/post/galbitang

Why is the first letter G but you pronounce it as a K?
@ModernPepper3 жыл бұрын
Hi Sun Hat! Excellent question! The English spelling is only the phonetic pronunciation of the Korean word, so therefore, we end up seeing various english spelling of Korean words. 갈비/galbi; 갈 phonetically has a closer sound of a soft G, not K. Kalbi (the other way it is spelled on Google), KAL would sound more closer to 칼, which means knife.
