Because it's new. The ones run by old people are worn out over the years, which IMO adds charm and character to those stalls. Makes me think, "damn if it's been in use for that long, the food must be good"
Imagine serving ramen to the guy who inspired you to open your stall in the first place. You can see how happy he is talking to you 🥺

Like he said he already owns a restaurant (izikaya that serves grilled meat and drinks if my Japanese doesn’t fail me lol) and wanted to be proactive not on the defense because of the virus. Costs are considerably lower for this cart so I suspect he’ll make it work until things open back up someday.
Noodle has been my number one food my whole life and looking at this man's craftmanship just brings it to another level. It is like sugar to my eyes.

So many yatai operators are elderly it's depressing; it gives the impression of a dying tradition preserved by people with nothing else to do. Seeing a younger guy create his own gives me hope.

The Dad's wonderfully crafted Yatai made the set up not as time consuming as you notice the cooker is built-in the cart. And the wood, back wall, cabinets are the cleanest I've seen. Many people will pay him to build it.

when i was travel to japan back in 2017, i always want to eat ramen from street ramen vendor like this, because i think there is no point to eat fancy ramen at shopping mall or fancy restaurant, this is the real japan cuisine, street food!

I swear it's like night and day! How lucky to rent a tiny apartment and never have to cook because restaurant quality food Is so accessable you Don't have to pay for gasoline because you can just walk to pick it up! You are so lucky

How i miss that sound. This brings back good old memories. These hot food street vendors have kept many hard working men warm during winter. Single males getting home 9-10-11pm dont feel like cooking.but soon as u hear that trumpet coming. Like a ice cream truck. Its time to eat

I been in Japan for 4 weeks, eat ramen everywhere about 5 times a week, and this is the ramen with the most meats that I ever seen, 4 pieces of THICK meat.
