We use the same recipe! Our zucchini bread sells out every week at the Farmer's Market. If you have a food processor, you can use the shredding blade to shred your zucchini. Thanks for sharing!

Actually it was another dough for making 2 loaves. I went a little bit further and made Zucchini Muffins putting this dough into the muffin or cupcakes tins. Thank you! They turned out really well! Great recipe! I baked at 325F but with Convection.

It so happened a neighbor gave me 2 zucchini today.I am going to make one tomorrow.Glad the recipe doesn't call for milk cause I ran out of it.I only had zucchini bread once and it was good.Thanks to you I can make it now . My husband would never eat zucchini bread because he hated vegetables; I made the batter into a slightly thicker batter and dropped heaping tablespoons amounts on the a cookie tray and baked them. They flattened slightly with a rounded top and were absolutely delicious. I left them on the counter and my husband did not know what they were, tried them and loved them!!! From then on, he would eat the zucchini cookies but still never would eat the bread. Maybe the consistency???

RECIPE FOR MOIST ZUCCHINI BREAD*** 3 Cups Flour 1 t Baking powder 1 t baking soda 1 t salt 3 eggs 1 c cooking oil 3 t cinnamon 2 &1/4 cups Granulated Sugar 3 t vanilla Extract 2 C Shredded Zucchini 1 C chopped walnuts (optional) Preheat your oven to 325 * Grease 2 8x4 inch bread pans ~In a bowl, mix flour , baking powder, baking soda, cinnamon and salt together ~In another bowl, mix together eggs, oil, sugar and vanilla extract. Pour the mixed dry ingredients into the wet ingredients and mix. ~Add zucchini and nuts and mix thoroughly. Pour mixture into both pans ~Bake for 45 minutes and check. If not done, continue baking until your knife comes out clean. ENJOY

Recipe was the same but the smaller ones was a different batch since we had to make more. All the same recipe but maybe the zucchini I used in smaller ones maybe were juicier?? All turned out the same. We appreciate you watching!!

You should try my recipe it is moist & delicious. To start off I shred my zucchini several hours before I make the bread so the moisture can drain off. 3c.unbleached flour,1c.ground oats, 2t.each baking powder,baking soda,cinnamon & all spice, 1t.salt. In a separate bowl mix four large eggs, 1c.granulated sugar,1c.brown, 1cube melted cooled butter, 2T. Lemon juice, 2 pounds shredded zucchini. Mix well and add to the flour.Gently fold the dough do not over mix. Grease bottom & sides of 2 loaf pans.Put parchment paper on bottom & up sides.Bake temp.375 time 50 minutes. Add raisins or nuts.

Have you tried this recipe yet? Sometimes, people drain their zucchini first... that could be why. I didn't drain mine, and it turns out Moist and yummy.

You ladies need to buy yourselves a food processor making zucchini bread would be much easier. After shredding my zucchini I lay it out on kitchen towels to lessen the moisture.
