I never throw away overripe bananas, I peel them and put 3 in a ziplock and freeze then I always have bananas ready to make banana bread, in fact I just pulled a bag out n left in in the counter for a hour to make some for company coming in this evening, I’ll make small loaves to slice for breakfast or snacks

I tried this banana bread recipe gluten free using oats, substitute butter with olive oil. Did not use sugar bc banana is already sweet, I added mine with 2 tablespoons of sour cream for added moist, fold my walnuts & cranberries and turned out to be really good!

After making banana bread for about 50 years, I offer the following comments which may make this easier. Mix all of your wet ingredients together, including the mashed bananas. That way the liquids are evenly spread throughout the dough with a minimum of stirring. At the beginning, I put sugar(s) and butter together and lightly microwave until the butter is soft to the edge of melting. This makes whipping the sugar and butter together (by hand) so much easier. If you try this technique, do not over heat the butter or otherwise let it cool so you do not end up with scrambled eggs when the eggs are added to that mix. Finally, I do not add nuts to the dry flour mix before combining with the liquids. I tried that a few times and found that the raw flour embedded in the nut surfaces and never got wet in the mix, didn't cook, and left an ugly appearance and a nasty flavor. Instead, I fully complete the preparation, then mix in the nuts. Maybe her way is necessary if you use chocolate chips; I don't add chocolate, so I do not know.

Adding the walnuts and raisins to the flour before mixing with the wet ingredients worked out very well for me. They didn’t fall to the bottom...which was always a problem for me. The bread came out moist and delicious! Thanks Gina!

I have tried so many recipes for banana bread, but this one is the very best, for sure. I have added walnuts, raisins and chocolate, (don't like the chocolate) and reduced the sugar a bit, it always turns out great. I even got praise from my mother in-law, OMG that's high praise

Miss Gina, My recipe is like yours but I have been using Hudson Cream SR flour for years. If you're not using a hand held mixer when creaming sugar & butter... the tines of a fork gets in there and gets it done. TY for inspiring your viewers & letting us 'taste' test all that yummy goodness. ;)

Wonderful recipe. Used wholemeal raw unbleached flour, cause thats what i had and instead of brown sugar, used coconut sugar. It still came out great. Family loved it. Woll definitely be doing this again.

Take your bananas and bake them on 350 for 25-30 mins till peels are black. No need in waiting to become ripe. Works like a charm.

This woman is dope. Not only love her recipes, but her voice. She has one of the neatest voices I've ever heard. And she appreciates her recipes so much. And in case no one else noticed, the beeping sound you hear in the background is a smoke detector that is needing a battery. She is probably like one of my friends who never changed the battery in his. He had heard the sound for so long and so frequently that he didn't even notice it any more. Too funny, too funny!

Omg mine turned out absolutely delicious!!! The only thing that I did different was, I added a half cup of sour cream. It was the moistest banana bread I’ve ever eaten. My kids are addicted, it didn’t last long ☺️ I have A feeling that I will be making this quite often. Thank you 😊

This is my go to recipe to make banana bread although I use half the butter and sugar amount. I also lined the pan with wax paper so that they pop right out after baking. I also substitute the banana with persimmons to make persimmons bread. Thank you Ms. Gina.
