Gemista is a Greek recipe for stuffed vegetables.
It was the only fasting option at the Greek restaurant where my husband and I went for our 10th wedding anniversary.
In fact, I only got lean stuffed peppers, which were too rich in some flavor complex.
I immediately had to research how to make stuffed peppers this Greek way and I watched dozens of videos and read many recipes until I picked up all the tips and got this wonderful and rich dish.
