Use a moka pot coffee maker to brew up a rich espresso style coffee on your kitchen stove top. Moka pots come in all different sizes, so it's easy to brew a cup just for yourself or for friends. Coffee from a moka pot is not a true espresso like you would get from an espresso machine, but it can be stong enough to kick you in the pants, and it makes a great cafe au lait.

How Does a Moka Pot Work
A moka pot is made up of 3 parts:
The bottom boiling chamber which is filled with water.
The middle funnel/filter which is filled with the ground coffee.
And the top coffee pot chamber where the brewed coffee collects.
When heated, the water comes to a boil in the bottom chamber and rises up the funnel and passes through the ground beans where it brews the coffee, continuing up through the funnel where it collects in the top chamber as strong, ready to drink coffee, or it is often mixed with hot water to make an Americano or with hot milk to make a cafe au lait.
A moka pot coffee maker is super simple and can be used on a gas or electric stove.
Fill the bottom chamber with hot water from the tap; fill to the pressure valve level, not above. Some folks fill the bottom chamber with almost boiled water,
and if you've got time for that, do so; usually when I want a cup of coffee, I want it as soon as possible, so heating it to completion in the actual moka pot works just fine
for me, and it cuts out an unnecessary step, I think.
Fill the middle funnel/filter with ground coffee--using freshly ground coffee beans that you love is the single greatest thing you can do to accomplish the perfect cup of coffee...unremarkable coffee beans will make unremarkable coffee no matter how you brew it. Do not compact the ground coffee into the filter, simply fill it level to the top and level it off. Use a medium grind of coffee, just like you would put in an electric coffee machine. Don't use a course grind as you would in a French press, or as fine a grind as would be used in an espresso maker where pressurized water is forced through the grounds.
Securely screw on the top pot, but no need to overtighten.
Place the moka pot on the stove on low heat with the top up.
Low and slow is the moka pot mantra. Even on low heat, it will brew in a timely fashion, so no need to rush.
Be sure that the moka pot handle is not overly exposed to the heat, or the handle may become too hot and become damaged.
After only a few minutes, the water will begin to boil and reach a temperature where it will rise through the funnel, pass through the coffee, and pour through the funnel top into the upper chamber. If your heat is correct, the coffee will come through slowly and fill the upper chamber steadily. The coffee shouldn't gush out of the top, but rather pour gently out of the funnel.
As the brewing nears completion, the coffee will quicken and become lighter and have a final push through the funnel top.

Great video! Almost perfect technique. The things I do differently - per Bialetti instructions and traditional Italian technique - are: fill the bottom with cold or room temperature filtered water to create the right pressure and give the coffee time to bloom; use medium-fine ground espresso, like the ones sold in Italian grocery stores: illy Classico Espresso, Lavazza Crema e Gusto, Lavazza Qualita Rosa, Kimbo, Bialetti Perfetto Moka Espresso, etc.; and immediately remove the pot from the stove when it begins to gurgle, and let it finish brewing off the stove from the heat inside the pot. Everything else I do like you did it. I love Cafe con Leche: 5 oz hot milk and 1 shot of Moka espresso. The best tutorial I've found is the "Annalisa J Moka pot" video, and next are "Il Barista Italiano Moka" videos.

I really like the pot for making cafe au lait. The pot here where we a staying is the small version, so it's perfect for one cup, and it brews right on the stove top and it's easy to clean up the pot afterwards

Yes chef Buck I thought you moved to a new place or you renovated your kitchen it's a real nice kitchen. I grew up with that pot my grandparents especially being from Italy we used to make demitasse a lot of espresso, but that type of coffee the way it's made it's the best!

Watched this only to realize: I've been doing it wrong! I use high heat, too much water, and not enough grounds. Also, I had the impression you needed a special espresso grind. LOL I destroyed mine and figured these don't work. Maybe I'll get another one and try again. Thank's Chef Buck.

you can definitely use finer grounds if you want stronger coffee, just a regular grind is strong enough for me...too strong really, but that's why I use it for cafe au lait...of course the beans make the most difference

​They do it wrong so they compensate by breaking the rule against packing the coffee. Bialetti instructions are use a low gas flame or a preheated medium electric stove.

Bialetti replied to my email that "the official correct grind for the Moka pot is medium-fine." Italian grocery stores brands of espresso are ground medium-fine for the Moka: illy Classico Espresso, Lavazza Crema e Gusto, Lavazza Qualita Rosa, Kimbo, Bialetti Perfetto Moka, etc.

hard for me to get away from it...most of my life I've worked in restaurants, so too often a pot of coffee is ready and waiting, and now it's a routine I can't imagine getting away from--unless it's hot outside--and then I can give up coffee and not miss it at all...when I used to live in New Orleans, I'd give up coffee for most of July and August 'cause it was just too hot to be drinking anything not ice cold

I have a few moka pots and I didn't even know that's what they were called. I've been chasing the dragon on the amazing coffee that I got in the Netherlands to no avail, but you may have solved my issue. I've been cranking the heat and making exploding coffee fountain volcanoes. Tomorrow morning I will attempt the low and slow method pictured in this video. Wish me luck.

I think that makes a big difference...I have to use the smallest burner on this stove because every other burner on the range top brews too fast, even on the lowest simmer

The only way to get the same amazing Moka coffee is to use the authentic traditional Italian technique, since 1933, which aligns with Bialetti instructions. This video is close, but not exactly. You'll have it perfect if you watch the "Annalisa J Moka pot" tutorial. Then watch the"Il Barista Italiano Moka" videos.

Hi Chef Buck, if you want strong coffee you just put more of the coffee and pressed, this one that you have maybe serve 3 cups of coffee and you can put the lid on and when is done it made a noise. Thanks for share.

nice video. I live in Miami so the moka pot is everywhere because Cubans are serious about their coffee in the mornings. The Bialetti brand from Italy is the best. I make my coffee with the moka pot probably ever 2 days.

I really like Miami...we thought about living there at one point, we ate a lot of great Cuban food when we visited...I couldn't hack the heat then, but I've lost a few pounds, so maybe I could hack it now.

I brew my Moka with hot tap water. Was taught by a Cuban and to me a bettet taste.

I agree. I brew mine with cold filtered water. It just takes a little longer to heat up the water but I think the taste is better starting with fresh filtered water than stale hot water that's been sitting in a 7 year old hot water heater tank.

Hot water is not potable, as it goes through the heating tank, which is not hygienic. Cold tap in kitchen is direct from the mains and so is safe to drink (depending on your country)

It has to have that cartoon of the Italian guy on it. That's how you know it's a good moka pot, but we always called it an expresso pot.

there is a cartoon of that guy on this pot--it's a Bialetti moka pot--but the image is almost rubbed off...I think it's a pretty dinky pot, but the folks who own the place where we're staying actually have an even smaller pot that they took with them while they're traveling

All of this seemed just right, I prefer to warm the bottom half separately for a few minutes first. Can’t recommend drinking water from a hot water tank. Maybe an on demand system? Old hot water tank water gets pretty nasty after years.

That grind looks pretty coarse, as if for a French Press. Still, better that than have the moka pot funnel blocked with fine espresso grind.

well, I've got a potty mouth, so I'd probably get in trouble as a teacher. I had a program a few years ago that I went around and presented to some middle schools...it was about backpacking and writing...I was always nervous that some of my colorful language would slip out during the presentation, but it never did...I stressed about it, though. We've been house sitting for a few months now, and it's really pet sitting, since most folks who want a house sitter do so because they want their pet to be taken care of without having to disrupt the animals routine. We've really enjoy the house sitting...we plan on travelling for a bit, so we'll put up some videos about it for sure.

It doesn't work the same as a percolator. And it doesn't make regular coffee, it makes a lower pressure home version of espresso that's intense enough to work in espresso-based drinks, like Cappuccino and Latte, etc.

I always think of coffee with a lot of milk in it as grandpa coffee cause I remember drinking coffee with my grandpa when I was a little kid, but mine was mostly milk

My grandparents drank coffee they got from the A& P store called 8 O'clock coffee and used an aluminum percolator which was entertaining to watch as a kid since we did not have the internet in the early 1960s. One time they just boiled the water in a pan and threw in the coffee grounds and boiled it a minute and let the grounds settle and poured it out slow- they called it Steamboat coffee, but I don't know why. My grandpa was born in 1900 so he may have spent time on a steamboat.My favorite coffee is iced coffee made with two glasses. You put a little sugar, cracked ice and cream in one glass and hot coffee and sugar in the other and then pour it over the ice. When you drink it the cream goes to the top and you taste it with the sweet coffee and it is wonderful and after it is mostly gone you get the normal coffee flavor and then when you are done and left with ice there is still some sugar at the bottom to give you another flavor. It is 3 drinks in one. I don't have a name for it, I just know it used to upset the people at the workplace cafeteria when I would take a big cup of ice to go with my cup of coffee and 6 creamers and 8 packs of sugar.

You’re supposed to use espresso coffee which is very fine grind

No you aren't. It needs to be a grind between espresso and French press, else the funnel will get blocked and will cause spitting, and burning in the lower chamber.
