It's because for Mokou at least, she has nothing else. Or very little else. Back in SSIB she was worried about talk of someone in Gensokyo going to the moon, and thought it was Kaguya, the only one she had anything to look forward towards. That was at a very dark time for Mokou, when she was unaliving herself on a regular basis too. Thankfully meeting Sumireko has given her a person to look forward to meet, an actual friend. If you take the canon stuff, Mokou is literally depressed from living so long. All she has is her fighting and unaliving. Getting revenge for her family name is all she has left otherwise.

@@Supperdude9 yeah she gotta spend the time doing things nobody else want to do, like leading strangers out of the bamboo forest and tending to her yakitori stand lol, i assume she also spends time with other characters like most of them do, like learning stuff with Keine or simply hanging out with anyone, Kaguya is not really that different though, if she didn't challenge Mokou to fight with her, she would also live a very boring eternal life, some people imply they have some sort of "Killove" for each other while others simply think Kaguya feels amusement tormenting Mokou often while Mokou is stuck in a constant and endless cycle of hate and revenge against Kaguya
