When a food shows heavy mold growth, "root" threads have invaded it deeply. In dangerous molds, poisonous substances are often contained in and around these threads. In some cases, toxins may have spread throughout the food.

Good to know. I have cut small bits of mold off cheese, but I didn’t know to cut that far around. Thanks for the info!

This is why I'm fastidious about bread too. Even the tiniest of mould spots and nope. I can even smell and taste mould on bread, even before it has visible colonies. So yuck. Of course, I'm a medical microbiologist and you could always tell when I had had a mycology lab, because I left with my eyes and nose red and streaming, and coughing up a lung. Mould allergies FTL.

Yep. USDA guidance is that you can cut the mold out of hard cheeses and firm vegetables (leaving a wide berth as our host suggested) but anything else - meat, softer dairy, fruit, cooked foods including bread - you should probably throw it out.

Thank you for adding info about how to cut around it, not to touch with knife or hands etc! Good to remember in keeping a clean kitchen and happy tummy

Hi FSB! Would cooking the cheese - let's say using it in a gratin - not destroy the mold and make the dish safe to eat?

No, normal cooking conditions won’t necessarily kill all mold and mycotoxins

Yikes, my whole life I just cut the mold off. Nothing has happened to me. What can happen?

Allergies (rash, coughing, wheezing, difficulty breathing, running nose and eyes etc), food poisoning (nausea, vomiting, cramps, diarrhoea etc), and illnesses from mycotoxins (anything from nausea to organ damage to liver, kidneys etc all the way to death in extreme cases). On top of that, if the cheese is mouldy, you don't know if there are also other organisms multiplying in the food, such as pathogenic bacteria. And potentially, multiple exposures over time to mycotoxins could produce longer-term damage and some mycotoxins are even carcinogenic. So yeah. Best to not take the risk, really.

Gradually eating stale food and deteriorating body which may show up later like backfire when you get older at least as small continuous uncomfortable body reactions?😐 Basically,we would be imbalancing the body functions and elements without even knowing

@@anant3910 You're a genius! I ate about a half of a bag of stale potato chips last month, and now my ankle is hurting. At 72, I can't afford any more imbalanced body functions. I'm never going to eat another stale potato chip. Thanks!😜
