I was doing this manually with tags previously for number of weeks that a person was in the sales pipeline. I can see where this could be used in a sequence with a timer and an update custom field to make it easier to update things for certain time periods in the process.

That's a good use case - you could count the amount of time (weeks, months, etc) that it takes for someone to make it from point A to point B; and then use a saved search to see the average duration Leads are spending in that section of the pipeline.

Is there anyway to add checklists to keap for different stages in your pipeline

Yes, if you use the Max Classic version of Keap then you can create checklists for your pipeline stages: help.infusionsoft.com/help/set-up-the-pipeline-checklist But if you're using Keap Pro or Max I don't think that functionality is available there.
