I think the dude fishing doesn't need to take it home to eat as food. he's doing it more for the enjoyment, and also to create great content for us wishing we were where he is. also the big fish are most likely females, so in Australia we normally let the bigger fish go, as they are older breeding females. Older fish also aren't as good to eat as smaller fish. There are probably other reasons why - other ppl please feel free to add/extend to what I've written here.
