My late mother, a daughter of Irish Immigrants,enroled in a 10 week class in Chinese cooking. One of her take-aways was to gauge a good Chinese restaurant based on how good their Moo Sho Pork was. And Always In-house. Delivered doesn't count.

Oh my gosh, my FAVORITE! Can't add pics to comments. I suggested this recipe so thank you VERY much for this! Also want to ask for the uses of Chinese 5 spice. You seem to use ingredients I use except the fungus I haven't cooked with but certainly have eaten in this dish. Moo shu is my favorite!

Black fungus is one of the ingredients used in the original version and have always been using it in this dish. It adds a bit of crunch to the dish and also the look as well. I use 5 spice in BBQ pork recipe as well as egg rolls. Also the kung poa sauce that I will be doing later. Also thanks for the idea. And please do post pics. Love seeing them.

It's gotten really hard to find a Chinese restaurant that serves the classic pancake like you made. Very thin and nearly transparent. Most of them use tortillas and not nearly as good. I usually just eat the filling with some extra hoisin sauce on top. I also like it cold the next day, the cabbage seems to have more crunch. Will have to try to make your filling if I come across some wood ear.

That looks delicious! Going to have to try that! I have a question for you. How do Chinese chefs make pork or beef so tender that it almost melts in your mouth? I know that they use the cheapest grades because of cost and when I cook it it comes out rather too chewy. When I go to the restaurant its different. Like so much better and tender. Or is it just my imagination? 😂

At our restaurant, we actually use a higher grade of meat and then marinate it overnight. Cost more but we never get complaints.

Hi Rachel. My hot pepper oil recipe is super simple. Just get crushed dried hot peppers and mix with canola oil or any vegetable oil and cook low heat on the stove for 10-15 minutes. Store in frig for months. Hope that helps.

These crepes are made of flour. Can prob use Mexican tortilla. Moo shu ones are a bit thinner but it’ll work fine if you are not able to find them.
