When my husband died and left me with young kids. A Mennonite friend of mine gave me that book! It helped keep a roof over our heads and decent food on the table. I still have it and use it for several recipes Viet Nam fried rice and my son's favorite chocolate pudding where you stir in the butter to make it creamy. More memories :)

Given that cookbook as wedding gift 35 years ago from my wife's sister and our brother in law (they are Mennonite) Tried several recipes that use basic and inexpensive ingredients - very practical Really like it!

Tessie, I have made this dish for over 50 years. Mine however was made in tin foil pockets. Here this dish is call Hobo dinner. You could make it either in individual serving packets or in a large tin foil pouch placed on a baking sheet and bake. That way there is no clean up needed. Ours you placed the raw hamburger on the bottom, then sprinkle rice over it, then all the vegetables. We don't use tomatoes in our dinners. The steam and cooking hamburger cooked the rice. My daughter Annette use to make these foil pocket for her husband's nephews when they came to stay the weekend. She called them Kangaroo pockets for these little boys. Now those boys are married with kids of their own. They are still talking about the Kangaroo pocket that Aunty Annette made them. I sometimes added fresh or frozen green beans in the pockets as well. Sometime placed frozen mixed vegetables in and omitted the sliced carrots. For a different play on the dish. I made it with hamburger, sliced potatoes, slice mushrooms, , onions and sometimes sliced yellow squash. As you said this dish can be made in all kinds of different dishes.

Reminds me of what we used to make that we called "Tin Foil Dinners". We put the same thing in tin foil pouches in the oven, one for each person.

I have LOVED that cookbook for most of my 42 years of married life. In fact, I am on my second copy!! Totally wore out the first. Our family’s favorite recipe from that cookbook is the Honey Baked Chicken. It is AMAZING. We have even grilled chicken using the sauce.

I read about that cookbook many years ago in the Tightwad Gazette, probably 25 years ago, I bought it right away and have been using it ever since. It is a great cookbook! I have never made this recipe but it looks good, I will have to give it a try! I like how you said it can be made with less than the full lb of ground beef because I am trying to stretch my meat these days.

Thank you again for a great sounding recipe.i took the hamburger out of the freezer just now,an have everything to make it.it has turned cold this week so nice to have the oven on for a few hrs. Sounds like this can be made for around 5.oo an will be good for 2 meals, for 2 days for son an I. Thank you so much. I'm going to look for that cook book. Hope all are healthy. Always something to do so can't say I'm bored,but miss not getting out . Do go to the grocery ,or dollar tree once a week. Wear gloves an mask,at my age I know I have to be super careful. Got plenty of the gold t. P. Lol I always buy extra of staples when on sale. So I had 30 rolls when this started. I bought 8 rolls yesterday,just to be safe. Until next time,luv an God bless. I live in a large Amish & Mennonite community in Delaware, and the More With Less cookbook is one of the first I bought at a Mennonite-run store that sells bulk dry ingredients, closeout frozen foods and also has a wood-stove section. The store has free pamphlets all around, showing what types of dry grains & flours they have and some ideas for how to use them.

This casserole looks delicious and nutritious. We like to organize meals ahead of time. We also clean as we go along. That way, we not only have a clean kitchen, we don't have anything but dinner dishes to do after our meal. Great advice, Tessie!

I've used that cookbook so much I had to get a new one! The recipes are healthy and thrifty! I make the 6 layered casserole and I use watered down tomato sauce for the liquid. Love these videos, Tessie!

LOVE THE "MORE WITH LESS" COOKBOOK! Ive been using it for over 40 years. As a young wife it really taught me HOW to cook. Love so many of the recipes but the Spicy Split Pea soup is the best! Also, this is a cookbook that builds your faith.

I've had the More With Less cookbook for about a year. It's become my favorite because it helps me cook more frugally and mindfully. The Sweet and Sour Pork recipe is absolutely delicious! But, you don't have to use pork, I have substituted chicken which is equally delicious. Many recipes include options to use different ingredients if you don't have the one(s) listed.

Hey y’all! Ooh Tessie, that is one of my favorite cook books!! Love the oatmeal bread recipe and cream of cauliflower soup. That’s a great idea with the carrots! I have 55 tomato plants coming up, looking forward to having my own canned tomatoes and sauces again. :)

I have made this recipe before. I got the recipe somewhere. It was called Shipwreck. I add salt, pepper, and paprika to each layer. Yum. Thanks for reminding me of this tasty recipe.

In cooking school, it was called mise en place or "putting in place" or "everything in its place" -- gathering all of your ingredients, bowls, utensils, etc. to make a dish! That way, you KNOW you have everything to make the dish BEFORE YOU START! Very good Tessie! You're awesome! :) Blessings from our house to yours! :) I love basic, whole food cooking now! Back in the 1960's I use to make this dinner using the same ingredients, but cooked it in a frying pan. Sauteed the onions and meat, added the veggies and tomatoes, covered with a lid and summered on medium to low until the veggies were tender and it was delicious. Hamburger was .39¢ pound back in the 1960's and carrots and potatoes filled the frying pan. I never used rice, but I now have to try your recipe and bake it in the oven. You brought back memories, long forgotten

Really enjoying your cooking videos. I defrosted my freezer and it still had food to use up quickly, so I have been coming up with several different meals. Didn't want to waste good food.

I'm actually having fun cooking and eating from the pantry!! I do the same as you. If I find a recipe I have the ingredients for, then that is what we have for the evening meal. Sometimes I also substitute if I don't have an ingredient. I much prefer the "down home" cooking with standard ingredients.

I love that cookbook!! I recently found the book Extending the Table with recipes from around the world "in the spirit of More-with-Less" at a thrift store. I haven't tried any of the recipes yet. I use the pizza crust recipe from More-with-Less all the time and am very happy with it.

That's a great meal Tessie love how you make good use of what you have looks great :) That is what we do with meals have it all planed out the night before so we can have it all cooked and ready:) Tonight we had breaded chicken with potato's and peas and carrots:) We made brownies too nice comfort food:) Look forward to many more of these cooking video's:) It was such a nice day today I was out in the yard all day just a beautiful day:) Tomorrow I will plant the Marigolds and Morning Glory's they are growing so big:) Love you my sister:) God Bless you and Ken:)

I have had this 6 layer dish when I was growing up. The only diffrence was the rice was yellow. I had forgot about this dish. Thank you Tessie for reminding me because it is delish and I will make this.👍💙🤗

That was one of my first cookbooks as a young wife. It lead me to Amish cookbooks from Lancaster area. I grew up in Willow Grove.

Tessie, I loved this recipe! I used to have all the Fix it and Forget it Cookbooks when I was a young newlywed, but thankfully, I have all my favorite recipes copied on my recipe cards. Now as a senior, on the same income by myself, I am back to cooking the same way. I am looking for a copy of this cookbook too. Thank you for this video on your legacy cookbooks.

Hi Tessie, That meal looks yummy. I make a similar dish but i use fish filets instead. Its quite good and i top mine off with bread crumbs. Next time i will try the ground beef. Have a wonderful evening.God Bless

This is just like the Amish recipe called Amish Shipwreck. They use kidney beans instead of carrots. Everything else is the same.

My mom used to make a 7 layer casserole, it had everything you put in but the 7th layer was peas. Talk about comfort food.
