I encountered my first one in Columbus, OH (not smalltown, but still midwest lol) about 8 years ago, and they immediately became my favorite summer drink. Sooooo refreshing! Then i moved out to Washington, and not a single one of the dozens of coffee shops and espresso stands in my area was making them. I fell down the espresso machine rabbit hole just so I could make them for myself at home. A couple of the local shops finally hopped on the espresso tonic bandwagon last summer. The two currently offering a them both do them with citrus juices -- one orange, and one orange-grapefruit, i think. I recently bought some beans cofermented with various fruits that make absolutely delicious ones. They're definitely a fun drink to experiment with, and I hope you come up with an amazing version!

Buy into the cocktail aspect: pour the espresso into a shaker with ice and a splash of tonic water, shake the living out of that crema and give your guests a show. Then layer it, because it's not perfect but less explosive and cooler. Works nicely at hope or if you have time behind the bar.

I always let the shot go through a paper filter! It takes a bit of time (you can help it go through by gently squeezing), but this works well because you get rid of the crema and also a lot of the particles that are floating in the shot which means it will stay more carbonated.

At a fantastic cafe / coffee cocktail bar in Shibuya, Tokyo called æ (pronounced “Ash”), they blend the espresso with a chunk of clear ice using a immersion-style blender like used when making milkshakes...but just for a few short pulses. This simultaneously aerates and cools the espresso while not diluting too much, but also breaking up the oils in the coffee (which will make gross bubbles when poured over the tonic). They then use a cocktail strainer and pour it over Fever Tree Elderflower tonic. It’s pricy tonic, but absolutely delicious when paired with a medium / light roast (Ash uses a light roast). One of my favorite drinks I make at home all the time, it has that Instagrammable “floating” espresso separation that looks pretty cool! I don’t have their kind of blender at home, so I just a normal one…pulse a few times and done. Same effect, probably not too big a difference in the tool, worth trying!

I had one of these for the first time in Bosie, ID last summer and was surprised I'd never noticed them around the Portland OR area where I live! I'm guessing that a) I just hadn't noted them on menus and b) I'm a more recent coffee drinker and still tend to lean towards tea drinks at cafes. Going to start making these at home now that you reminded me of them! But right now I'm drinking the "orange juice/espresso/vanilla syrup/milk" drink from your "Making And Rating My Follower’s Weirdest Coffee Orders" video.

Regarding floating the espresso: if you tip the glass a bit (unbtill the tonic is at the edge of the glass), and pour from as low as possible above tonic level (obviously while straightening the glass as the content rise), you can easily slide the espresso down the side without that spoon. It's one less thing to mess with (and clean).

Okay it's SO interesting that you said lime is the main citrus, because I have always thought of orange as the "main" citrus to use, then lemon, then grapefruit, THEN lime. Something about the lime doesn't work as well for me. Also my first espresso tonic years ago had orange, so I think it just feels more classic to me!

Thanks so much Morgan! I'm a long, long retired barista and bartender (and one-time pastry chef) who's been living under a rock so this is the first I've heard of an espresso tonic. Although I think this would be an incredibly easy thing for me to make and I'm dying to try it there's one problem: I have always hated tonic. It's not the bitterness itself -- it's the quinine flavor outside of the bitterness. Is there any chance that flavor gets lost or transforms with the addition of coffee? Would the profile still work at all if I subbed club soda? Thanks for your time.

Maybe a silly question but, why not build the espresso tonic "on top of" the espresso (or, if using tonic syrup, assembling in order of ice --> tonic syrup --> espresso --> soda)? i guess, i can think of a couple obvious issues: losing the layered look, smaller window/less repeatability regarding dilution since you have espresso in contact with ice at the start of the drink, and not being able to build the drink in the disposable vessel it will be served in. Honestly maybe all of those are potentially disqualifying (at least in a cafe setting) for that method! But I wasn't sure if there was something else I was overlooking that was an even bigger issue.

I have had great success by filtering the espresso, thereby removing both the crema and the micro solids inherent in espresso that act as nucleation points for the CO2 (inspired by Daddy Hoff’s coffee soda video.) Maybe a bit more wasteful than a reusable HyperChiller or a spoon, but probably more readily available for coffee nerds than a syringe? Any big downsides in taste by removing solids?
