There's nothing better than BBQ chicken if the chicken is done right. Most of the time chicken breasts are overcooked and very dry. I used a kettle style BBQ for this recipe but you can also do it in a conventional home oven. The main secret is to seal in the juices with high heat at the start and then slow cooking for the remainder of the time at a lower temperature. That's where these charcoal BBQ's are ideal because as the wooden or coal naturally die down, it automatically lowers the temperature rendering a super juicy bird. The second part is by spatchcocking or butterflying the bird. By splitting open the bird and spreading it out, the breast are on the same level as the legs giving you less chances of over cooking them. If you're cooking this in a BBQ, add a little piece of water soaked wood for that smokiness at the very start.

It's very hard to describe, I would say it's slightly lemony, floral fragrance and maybe a touch of sage to it. Very difficult to describe as it's quite unique.

I just pulled this off my Weber Kettle charcoal grill, the seasoning was spot on perfect but I added a dash of cinnamon, thx Joel, another perfect video 🥃🥃🥃🥃 cheers pal

Amber Hollis It's the skin and the layer of underneath it that allows the meat to stay juicy after being BBQ'd. If you remove the skin, the meat will easily dry out. You can steam the chicken without its skin and directly applying oil and spices on it if you want. You won't get the same roasty textures et flavors as in the BBQ, but the chicken retains close to no fats - besides the drumsticks obviously - which makes a great diet meal.

Looks delicious but there is lots of missing chicken parts you dud not have to cut off and could have grilled. I am almost certain you used those pats in soup but could have grilled as a whole chicken. It was not necessary to cut off those parts.

I prefer to wash my chicken & remove all fat from the carcass part, pat dry then season.

Washing a chicken is not recommended as you can cross contaminate your kitchen. The fat is what stops the meat from drying, best to leave it on. Drying the skin is fine.
