Hi Mortar and Pastry! I just want to say thank you 🤍 dahil sa mga videos niyo natuto ako mag bake/luto ng mga pagkain na gusto ko at kini crave ko. Noong pandemic, lagi kong tinatry lahat ng recipes niyo. Nakapag benta din ako extra income noon. Ngayon dala dala ko pa din ung mga natutunan kong recipe dito sa channel niyo. Wala man ako degree sa culinary or patisserie pero Chef na ako ngayon dito sa New Zealand 🫶🏻 again, thank you so much Mortar and pastry.

For those who were asking about the deflated meringue, I used a smaller but deeper baking pan. It worked well :) It deflates but still leaves a big, fluffy meringue underneath. For the custard, I double-boiled it before cooking it in direct heat to make it smoother than just cooking it in direct heat/fire.

I tried this today and turns out perfect & delicious. The filling is so yummy. I believe that the secret of successful baking are first Follow the procedure carefully... Second is Patience. Thank you for the wonderful tutorial.

Thank you so much for sharing this. I made this last Mothers' Day for my mom, my grandma, and my boyfriend's mom. They all loved it. Nothing beats a classic Filipino dish for Filipino moms.

i just baked this last night. The taste is good and very soft. I've followed your instructions, but i added 10 more minutes in baking because the meringue is still uncooked, maybe depends on the oven. I just forgot to comb the meringue. And when i remove the parchment paper, it sticks. But over all, my ist try is delicious. Thank you for sharing.

Hello! Thank you for sharing your experience. You're right, baking time may really vary depending on your oven. If it sticks too much, it might need a bit more time in the oven. It may also stick because of the quality of the parchment. Some parchment papers available even cookies does sticks to it. Glad you still enjoyed! :)

I want to try this but I am still confuse on what setting I should use in the oven because the oven we bought has setting on where the heat should release. Does the heat need to release in up and down or just down or just up?

My meringue keeps on sticking on the parchment paper :( when i try to detach it the whole thing got ripped off. Any tips on how i can prevent the meringue from sticking on the parchment paper?

Hello! You can lightly brush your parchment with melted butter or vegetable oil next time. You can also try other brands of baking paper. I use Glad baking paper for this one and it always comes off easily :)

I just did this today for the first time. I made a little mistake, i accidentally put the vanilla in my egg whites instead in egg yolks. But still it turned out perfect and delicious. Thank you 😘

Maam question lang, first time ko lg po gumawa ng brazo de mercedes.. ang napansin ko ung meringue after baked, nag momoist siya, tas hnd dense kapag kinakain very light parang foamy ganun. Can u please advise me if anong mali? thanks;

Hello! You can try to beat it more next time until stiff para smaller yung air pockets and mas dense but soft siya. Yung moisture po normal sa powdered sugar sa humidity and weather natin. You can try adding a bit more cornstarch po sa powdered sugar para less likely na mag moist :)

Ano po gamit nyong oven? yung sakin po kasi baumann, lagi po ako nagaadjust ng temp kasi po kada try ko ng recipe laging nasusunog. sinet ko lang po sa 140C in 20 minutes pero parang di po maganda ang pagkakabake

Question po, size po ng pan po gamit nyo, sakin po 8x11 po nasunog po sya sa 160C 11 mins. Paano ko po ba iaadjust palagay nyo? 18L oven lang po ksi gamit ko nag triple size sya, kaya nasunog siguro. Thanks po s recipe

@@21ryro30 yes, i timed it 20 minutes. Although you need to be careful in choosing the pan necessary for the amount of batter you make. You need the barter to fill the pan fully and should be thick. Otherwise it's gonna come thin and flat. I recommend you use large eggs or XL ones.

I will also do it in half and divide into 4 since the oven is very small, gove for 2 pcs burger inside.

Hi! Ang production cost for this recipe is 100 pesos. Pwede mo siyang ibenta ng 200-250php including the overhead and packaging. Depende padin sa magiging total cost sa ingredients na gagamitin mo :)

Dahil sunod, sunog din po ba lasa or it's just the color? Kahit po ba sunog naiikot pa rin po ba or nabuo na?

Hello, bakit po dumidikit yung meringue sa baking paper? Numipis po tuloy yung cake na nagawa ko :( pero masarap naman po sya

hello po,I made brazo de mercedes once,ng deflate po sya after e remove sa oven..ano po kaya mali sa gnawa ko?

Hello! Normal lang po na mag-deflate ng konti. If too much po ang pag deflate, make sure po na stiff yung meringue. You can also try leaving it inside the oven for a few minutes after baking para hindi mabigla sa sudden change in temperature pag labas ng oven at ma-stabilize yung structure. Hope this helps! :)

What size tray po did you use for the meringue? They biggest baking tray I have seen in the stores doesnt look wide enough 😅
