6 months ago my deacon at church asked me to pray for him because he had just learned about his macular degeneration. I said, I’ll pray, but unless you change your diet you have no hope of cure. He sat down next to me, and said “Tell me more.” A recent widower he was overwhelmed as a new person to food preparation. He invited me to his home to police his kitchen cabinets to get started. I threw away literally 90% of his food and he didn’t flinch. The medical diagnosis was his catalyst. He now happily follows a low carb diet of healthy real foods and fixes himself chaffles, pepperoni/cheese chips for snacks, and other delicacies like cheeseburger pie. He lost 40 pounds and feels fantastic. Eyes have stabilized and is a Dr Berry follower, he just turned 83. I suggest you ask permission before cleaning out peoples’s cabinets LOL

Dr. Berry, love your work. FYI, there is research coming out showing that pork and poultry have high levels of linoleic acid these days due to the animals being fed corn and soy and such. If you look at modern bacon you can tell. Back when I was a kid (70s) bacon fat coming out of the fridge was stiff and hard. Nowadays it's limp and greasy (much less saturated). Recommending lard without knowing the way the pig was fed is problematic. I'm not sure of the source of this info though. Maybe Chris Knobbe. It was a researcher Paul Saladino had on his podcast though. Beef, being meat from a ruminant, does not appear to have this issue so tallow is apparently still fine. That's the direction I've been going personally.

Kirifuda I’m pretty sure you can make ghee at home
@raraavis77826 жыл бұрын
Ghee is super easy to make. Dump a pound of butter into a pot and let simmer for about 20 min. Remove foam from the surface periodically. To test for ‚doneness‘ hold a lid over the pod for a couple of seconds. If there is still steam condensing on the lid it’s not ready yet. Once all the water is evaporated, it will be a clear, golden liquid with some stuff floating around on the bottom (milk solids). Filter through a piece of cloth (coffee filter don’t work) let cool somewhat and put it in a silikon icecube mold. Ghee is fairly hard so it’s more convenient to be able to remove it in little cubes, especially if you want to keep track of how much you eat. And properly made ghee won‘t spoil for quite a while, so you can make big batches if you want to.

Hi, Great video! When I was growing up in rural VA in the 60s everyone had a canister of bacon grease that was kept on the stove top to cook with. Also, everyone flavored many savory dishes with salt pork slices. I remember how tasty it all was then came along the low fat study in the 70s (from what I now know was an inaccurately published heart study that started the whole thing). My parents also raised pigs and rendered beautiful lard. Younger people don't know what they are missing. Thanks to your truthful videos I hope society goes back to the things that were truly good.

My acid test for whether a non-animal oil is healthy or not: Can I get oil out of it if all I have is a mortar and pestle? I have an unrelated question, though. I am in the early days of a ketogenic diet, but I have been reading around and I am worried for my thyroid and giving me second thoughts. I have been reading that a very low carb diet can be bad for an already diseased thyroid. According to these "experts," you need to consume some carbohydrates to convert T4 into T3, and that in order to keep your blood sugar from dropping to zero, your body raises its cortisol level which is taxing to the thyroid. They have warned not to let carbohydrate consumption drop below 30 grams per day. There has also been people claiming that a ketogenic diet made their thyroid worse. I was hoping you could clarify, or at least point me to where I can understand how this all works.

Oops. Throughout, you seem to be equating hydrogenated oils with unsaturated oils. They are not the same. Hydrogenated oils (like shortening and most kinds of hard margarine) have hydrogen passed through them at high temperatures, causing the oil to harden and thus mimic saturated fats. These hydrogenated oils contain so-called Trans Fats, and are considered the worst and most damaging of all fats. Unsaturated oils, on the other hand, includes both the polyunsaturated and monounsaturated fats from most non-animal sources, including olive, avocado and walnut. They are referred to as vegetable oils because they're vegetarian -- i.e. from non-animal sources. They all contain varying amounts of the omega-3 and omega-6 fatty acids. Both are needed for health, but most oils contain too much omega-6 proportionately. The real issue is processing. Expeller-pressed means a simple mechanical extraction; chemical-pressed is done with hexane and high heat. Even healthy oils can be badly extracted. I actually do avoid most "vegetable oils," but I'd urge you to study the science a little better, because the info presented seems slanted, sensationalistic and ill-informed. Sorry!
@r.k8623 жыл бұрын
is sunflower seed oil ok to use?
@mockatu3 жыл бұрын
Even an expeller pressed oil like soybean is mostly poly unsaturated. These fats have been shown to be mostly foreign in human diets before the development of seed oils in mass qualities like now. Are not protective against heart disease, increase risk of cancer, diabetes, obesity, and more.

I've known about the dangers of most polyunsaturated oils for a long time - and avoided them as best as I could. But, what do you think of sesame and rice bran oils? Both have tons of very potent antioxidants that protect them from rancidity, and from cooking temperatures. Also, you didn't mention the 3 palm oils - palm or palm-fruit; palm-kernel and coconut oils. Not only are all 3 highly saturated fats, but they have lots of antioxidants too (especially the palm fruit oil). Aren't these also OK to cook with?

My understanding from Tucker Goodrich is that polyunsaturated fats oxidize more easily ("poly" meaning they have more than one unstable bond). Monounsaturated fats (like olive oil) have one unstable bond. Saturated fats have no unstable bonds and are very stable and therefore best for cooking (heat causes oxidation). Palm and coconut oils are mostly saturated so don't oxidize as easily as other vegetable oils that are mostly polyunsaturated fats, so they're ok. However, animal fats are preferred because they contain lots of vitamins, while plant fats don't. I believe it was also Tucker Goodrich who mentioned in a video that sesame oil was invented in India 5000 years ago. Sesame is polyunsaturated and contains a lot of linoleic acid, and it was likely not a coincidence that people started getting diabetes when they started eating sesame oil. It's a fascinating hypothesis and I've really enjoyed learning more about this topic from Tucker Goodrich - really recommend his stuff.

At 4:50, you need to correct this. Some unsaturated fats are essential fatty acids, particularly in the brain. I quote: Long-chain polyunsaturated fatty acids are important structural components in cell membrane phospholipid bilayers, with EPA and DHA concentrated in synaptic membranes in the brain and in the retina (Dyall and Michael-Titus, 2008).
