I think Chinese restaurants are too practical lol. Japanese mastered marketing and being pretentious after the 80's and now everything that pricey is some type of near mystical thing about combination of heaven and earth and chef or farmers spirit in the food. They basically took advantage of orientalism and profited off it. This isn't to say there isn't effort put in, but there's a lot of story to go along with it to make it an "experience“.

KBBQ can charge high-end price when you cook it yourself, Sushi can charge high-end price when it’s served raw, a steakhouse serves a half-cooked steak with minimum prep work (unless aged). Chinese cuisines are criminally under appreciated in America.

When it comes to asian food at that price, you usually get what you pay for and price is justified. Also, you must be asian or at least understand asian culture to justify the price. You cant be some westerner who doesn't understand asian culture or never had asian food to be judging the price and this applies to any culture's food, not just asian. These food vids are dope! You got your money's worth -- and more. What you ate all looked great. These restaurants recognized you though. You may have received above standard food and service. In addition to expensive ingredients, some of the items require an enormous amount of skill and technique to make. Hardly anyone could make what Hutong served you at home.

I think that the cost for many is out of the park esp if you are a family of many on a limited income. I think often pricier restaurants just don't even register for some because it feel like such a waste. when your income is limited things like that are a special treat and often places come and go before you get to even try them. In the meantime I can try and enjoy vicariously through you. Thank you for that experience

Only in America is expensive Chinese novelty. In Places like Hong Kong and Vancouver British Columbia expensive, delicious Chinese food is common. Of the places you reviewed the second place seems to hold the most value. All the ingredients use are on the high end where as the other places seem to use more common ingredients.
