Good to see non-Japanese Asian food "elevated". At the same time, looking at the prices, damn. I'd say Hokkaido is kinda more like the bipolar opposites of China, where in summer it's got great amazing seafood like southern coastal provinces and cities, then when winter comes it's like you're in Heilongjiang or Beijing where it's big on ramen, hot pots, and red meat. The big difference is that hokkaido is pretty well known also for Whiskey and Milk products.

Well agnolotti is the pasta shape and is not named after a braised meat. The lobster ramen could have been presented better and the bolo bun as a savory sandwich is nothing new but the bun itself was not the best looking imo. Great video which show how diverse the (Asian) food scene is in NY. Take care

All these dishes look either too american or too chinese. Even the ramen I guess there’s no comparison to the amount of Chinese x japanese that it’s in new york I’m personally not too fond of chinese food or american food..so these don’t look too appetizing to me. Missing some japanese and korean inspired food there In my opinion best asian fusion food is in South America and Europe.
