Nice! Growing up we did mostly fresh water fishing, Mom and I, but always scaled and ate our fish skin on. I equate it to prime beef with a bone and a nice marbling. There lots of flavor in that skin. Enjoy that cool weather. We're in the peak of the leaves changing here with our first sub-30's temps at night.

I grew up down near Juno Beach and used to fish as a kid. Now this makes me want to go back to it. I used to love catching mangrove snapper and sheepshead back in the day. If I didn't live near Orlando now, I'd be on it, but I'm getting the itch now and my parents have some old rods collecting dust at their place. I think I may get back to it soon.
@roryf.1349 Жыл бұрын
Update: I now have 3 rods & reels, I got a Dextreme 7" (fyi: Brook's code works on it, yours didn't Vic). I'm getting a tackle box tomorrow, I got some Tuf Line coming in soon. I'm going to start making my own sabiki rigs and fly jigs once I get my last thing in for them. Soon, the St. Johns and the Cocoa Pier won't know what hit 'em! I have you and Ryan to thank for rekindling my interest in fishing. Thank you both and Brook for the top tier content.

Here at Topsail Island, NC, we got the top northeastern edge of Ian. Mostly wind and a little rain. But the fishing after gives us some fish at the pier that is normally out on the rocky reef that's about 300 yards off the end of the pier. This time we're seeing a lot of Black Sea bass,, most of which is just under the 13" limit, but occasionally there is a keeper caught. We're still seeing finger mullet, and roe mullet, and mullet in between,, which is bringing in Spanish mackerel, blues, lady fish, and as soon as the water cools down a little bit more,, some spotted trout. We're normally seeing some king mackerel too, but for some reason we're not. Keep up the good work, and keep those videos coming!

"Snappaah blues", man that brings me back to my childhood. Some days on the jetties you can just catch them non stop. The problem is that you typically want something else because bluefish are really oily and strong, and they don't keep well. They do however make the best smoked fish dip...

As Brook demonstrated how the meat comes off the skin, it seemed to me that the oils from the skin / Connective tissues associated there were just glistening. Perhaps that is what half shell cooking adds to the dish providing that extra difference in flavor. As always a nice video Vic and cinematographer Brook. Great meals are always best shared with the one / ones you love.

One thing I learned with mackerel: you can't go too hard, at least in the beginnin'(so loosen the drag and only thumb the spool when they try to break you off) and of course check your hooks, also beefier hooks stay in better.

The skin can give flavor. One of my top four favorite fish dishes, so far, is the simple freshwater sunfish battered and deep fried. The REAL fish fry. Keep the skin on and take the scales off during preparation. I think people even eat the fins. I barely remember, but the fins taste like roasted pumpkin seeds or peanuts, like a burnt pork chop maybe? Different from your dinner in this video, I took the scales off and enjoyed eating the skin. Somehow it beats everything except crab legs, scallops or lobster. I don't do the fins any more. Tried them and liked them, but I leave that bite for the fishes.

@TwoFingerSaloute2 жыл бұрын
I’m no chef but I’ll guess that when you cook it with the skin and scales on, it not only protects the meat from the heat but also allows the fish to continuously cook in its own juices throughout the entire cooking process which gives it that extra flavour kick and tenderness.
